Eggs in Purgatory

Saw this on Nigellissima last night. Looks so amazing i'm gonna have it for my tea tonight!

In a small frying pan, gently sweat one garlic clove and some finely chopped red chilli in olive oil until soft.

Add one tin of chopped plum tomatoes.

Once the tomatoes are bubbling away, crack one egg into the centre.

Grate a small amount of parmasan on top, to taste.

Put a lid on, cook until egg is poached to your liking, serve with chunky wholemeal bread.

All for 300 or so calories, depending on how much bread you go for!

Yum yum yum!

    I saw this too. I am actually in love with Nigella and want to be her slightly submissive, shy wife.

    In other news, this recipe - whilst sounding somewhat odd - actually looked delish. Going to give it a go myself :)

    Lol me too! She is just too wonderful, i would quite happily live quietly in the corner of her kitchen basement, watching adoringly and eating all the leftovers!

    I do this for brunch sometimes but with leftover vegetarian chilli - put it all in a pan and make little holes to drop the eggs into, then serve over toast. I think it's something similar to Huevos Rancheros? Simply delicious.

    Started watching that but there is something about her that really winds me up. 10 minutes was all I could manage.

    By the way, thank you for sharing the recipe.

    I would probably make it with fresh sliced tomatoes instead of tinned and towards the end of cooking, throw in some flaked smoked fish (mackerel or haddock) and a couple of chopped spring onions for a bit of crunch.

    One of my favourite weekend breakfasts.

    Did you see the meatza? I liked the idea of it - but then it looked a little dry when she was serving it up to the kiddies

    But still..........meatza *drooling*

    By the way Nigella does look amazing, doesn't she? There's no way she eats the stuff she cooks, well not anymore at least .......

    Hmmmmmmm. I’ve yet to be tempted to try any of these Nigellissimmaa
    concoctions. She's not a proper cook - have you seen her try to chop an onion?
