Slow Cooker Ideas

Hi All,

As the weather is gettting cold I think its time to get out the slow cooker.

Anyone know any yummy low cal recepies?

    chicken breasts (2 whole or 4 halfs)
    taco seasoning (one packet of your favorite)
    salsa (one jar; pace picante works well)

    best taco type filling! And... you can put it on a salad or a sandwich
    or a tortilla or anything you want! Serve it with an over easy egg....

    A couple weeks ago I took a package of boneless skinless chicken thighs, rinsed them and placed them in the crock pot. Then I dumped the contents of a whole can of chunk peaches on top (along with the juice). Simmer away for 8 hours on low. REALLY low cal and no added sodium.

    I've just got one of them and I do anything in it! I've done

    Pork and Apple Caserole - just pork chops onions apples and stock - bung it all in and serve with mas & veg
    Spag bol
    Chilli
    I'm doing some lamb shanks in stock this week
    I've done beef stew
    Mince and Potatoes tonight.

    I just bung it all in and leave it on low!

    I stocked up on stuff to throw in my slow cooker expecting cooler temperatures, but the weather here just faked me out and we're back into the 90s for another week or two. But anyway:

    Steel-cut oats with apples, raisins and cinnamon

    Lots of beans... blackeye peas, pintos, black beans, whatever's on hand. Learned this the hard way: don't put tomatoes in with beans at the start of cooking or the skins won't get soft until the beans are overdone. Onions, garlic, celery, carrots, greens all OK.

    Been meaning to try jook/congee but haven't had the chance yet. Maybe when the weather cooperates.
