Lentils--Any Quick Recipes?

So I'm making lentils for the first time tonight for a new recipe (Bacon and Cheese Lentil Pie), and I know I'm going to have tons of lentils left over (I started with them dry and soaked them overnight). Any suggestions for other ways to eat them? Thanks!

Use them instead of beef in pasta sauce!0

I toss them in the crock pot with tomatoes then throw in a can of coconut milk right at the end0

They are great mixed with basmati rice. Boil them in the same pot, dump into.strainer to drain, dump back into pot, douse with a little olive oil and salt to taste. It's a very popular middle eastern dish and super cheap.0

Have lentils, rice, salsa, lettuce, and a bit of cheese if you can eat it, avocado. MMMMM very tasty taco salad kind of meal and very filling.0

lentils (red and\or brown), canned garbanzo beans, a can of diced tomatoes, carton of broth, fresh baby spinach, chopped carrots, celery and a sausage taken out of the casing and pre-sauteed with garlic make a yummy soup (I season with red pepper, cardamom, cumin and fresh ginger with some store bought garam masala)0

Make chili with them. Just pretend they are the ground beef and season as you would for chili
tomatoes, onions, chili powder,cumin - whatever you might use.0 -

So here's the link to the recipe I made--it was really good. I put it in to MFP recipes and it comes out to 353 calories a serving. It's not really a light recipe as is. When I make it again I will bake mine in a single serving dish and put less cheese and bacon in it. My family really liked it too--always a plus!:)0 -

Lentil soup (laal daal)

This recipe is shared by my sister who learned it from my mother. Unlike most of the curry/soup type recipes, this is a dish I donot recommend eating with rice. You can eat this like soup or eat with bread to make it an entree. Hope you enjoy it.
Ingredients:
1 cup red Lentils (These are tiny red colored split lentils, easily available in most stores)
1 medium onion
2 tbsp tomato paste
2-3 green chillies (depending on how hot you want it, you can easily skip it)
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp salt
Ingredients for Tadka (to put on top of the soup)
1 small onion
2 cloves of garlic
1/2 tsp cumin seed
1-2 whole red pepper (The one thats shaped round but any dry WHOLE red pepper will work, DO NOT use pepper flakes)
1-2 tbsp olive oil
Recipe:
Take the red lentil, add the onions, green chilli, turmeric powder, red chilli powder and cook it till the lentils are tender. This kind of lentil cooks faster compared to most, I'd say about 30 minutes. Once the lentils are cooked and tender, you can add salt and tomato puree and cook it for another 5 minues while stirring the soup. Your lentils are technically cooked but for more flavor, you need to add Tadka to it on top. Turn off the soups heat and in another pot (or small fry pan) prepare tadka
Tadka Recipe:
Heat the olive oil. When its hot, add the chopped onion and chopped garlic. The garlic and onions should be very very thinly sliced, the finer the better. Cook it till the onions and garlic is golden/red color then immediately add the cumin seed and the red pepper. Let the seed and pepper cook for about 15-30 seconds and then dump it all in the soup.
Your delicious soup is ready to be served, you can use some good bread to dip this into and enjoy

For the entire recipe (using 3 tbsp oil)
Calories: 838
Fiber: 44 grams
Carbs: 112 g

I make split pea or red lentils. Just fry some onions, tomatoes, salt and cayenne pepper(to taste) and add the boiled lentils. Mix them up and squeeze a lemon wedge when it cools down. have it with your favorite pita bread or tortilla.
I also add tons of garlic and fry them up for a couple minutes in olive oil. Garnish with cilantro.0 -
sprinkle it over any salad. it goes well with onions, greens, celery, lemon, vinegar, ... my favorite. JUst don't leave cooked lentils in the fridge for a month. They do eventually go bad, and what an foul odor!0

My teenage girls love it when I make lentils....I start off by sauteeing onion, peppers, garlic and even a little carrot if you like in a saucepan with a small amount of olive oil. Next I add some seasonings, typically I use the costco no-salt seasoning and some sea salt and pepper (I know...no salt, then add salt - funny!) add the appropriate amount of water (read the package) or even better use chicken broth and cook until all of the water is absorbed.
Since you already soaked them, I presume you could just toss in with the vegetables?0 -

Look up some recipes for lental dal- an indian dish, lentil stew type dish with curry spices.
You can just saute some onion and garlic in oil, add about 2 tsp curry powder, salt/pepper and add lentils and a little chicken broth and coconut milk and let simmer on low until thick. Delish!!0 -
If you like Indian food, i have a quick recipe...
1 cup dry lentils will yield almost 3-4 cups cooked
Fry 1 cup Onions, 2-3 cloves of Garlic, Green chillies(optional) until slightly translucent
Add a half tsp of Turmeric, powdered or fresh Ginger and keep frying
Add salt, pepper, a pinch of sugar and 1 bay leaf and keep stirring
Add half a 14oz can of diced or crushed tomatoes and continue frying.
Add 1-2 tsp of your favorite Indian curry powder and stir that in
Add 3-4 cups of chicken broth or plain water and stir everything.
Taste test it for salt content or if you need more curry powder
Bring to boil then turn it low, covered on simmer until you're happy with the consistency.
Add more cumin, salt, a pinch of sugar and black pepper if needed.
There are soooo many recipes for Indian Lentils ...this is just one quick one.0 -

or you can go the lazy way like I often do, and just cook some lentils, mix in sloppy joe mix, and call it a day

Add mushrooms
Add lentils
Add water/broth to cover lentils
cook until lentils are soft (30-40 minutes)
Add spices (i used sage and thyme)

I love lentils! I like a basic lentil soup with onions, carrots, garlic, maybe a bit of curry. I love it as a taco filling spiced with your regular taco seasoning. Often I add a scoop of lentils or beans to a big salad. Tonight for dinner I just had a plate of lentils topped with a fried egg on top (sometimes I add sauteed greens.) So good, I hope you find some great uses for them.0

my flatmate made this AMAZING brocolli and lentil salad last night. It had in it cooked brocolli, canned lentils and a dressing of soy sauce and fresh coriander. Probably some other ingredients in there too, but it was yummy!0

A friend of mines told me that you can make veggie burgers using lentils and a couple of other veggies, but he never shared an actual recipe with me. Also, I haven't found any recipes online that completely WOW'ed me.
Do any of you have a recipe to share for them? I found some lentils for the low-low a couple of weeks ago and now the poor things are just sitting in the pantry growing wiser by the day.0 -

Vegetarian Lentil Burger Recipe
"These make great do-ahead meals, and you can store shaped, ready-to-cook patties in the refrigerator for a week's worth of work lunches. Feel free to spice up the batter by experimenting with your favorite seasonings."
3 cups cooked black lentils
4 large eggs
1/2 teaspoon fine-grain sea salt
1 onion, finely chopped
1 cup toasted fine (whole-grain) bread crumbs
1 tablespoon extra-virgin olive oil (or clarified butter)
Combine the lentils, eggs, and salt in a food processor. Puree until the mixture is the consistency of a runny yet textured hummus - it's o.k. if many of the lentils remain whole (see photo). Pour into a mixing bowl and stir in the onion. Add the breadcrumbs, stir, and let sit for a couple of minutes so the crumbs can absorb some of the moisture. At this point, you should have a very moist mixture that you can easily form into twelve 1 1/2-inch-thick patties. I err on the moist side here, because it makes for a nicely textured burger. You can always add more bread crumbs a bit at a time to firm up the dough if need be. Conversely, a bit of water or more egg can be used to moisten the batter.
Heat the oil in a heavy skillet over medium low, add 4 patties, cover, and cook for 7 to 10 minutes, until the bottoms begin to brown. Turn up the heat if there is no browning after 10 minutes. Flip the patties and cook the second side for 7 minutes, or until golden. Remove from the skillet and cool on a wire rack while you cook the remaining patties. Carefully cut each patty in half, insert your favorite fillings, and enjoy immediately.
Makes 12 mini burgers.

Lentil Cakes
Ingredients:
1 cup dry brown lentils
2 1/2 cups water
1/4 cup milk
1 cup wheat and barley nugget cereal (e
.g. Grape-Nuts™)
1 (1 ounce) envelope dry onion soup mix
1/2 teaspoon poultry seasoning
2 eggs, beaten
1/2 cup chopped walnuts
1 cup seasoned dry bread crumbs
2 tablespoons vegetable oil
Directions:
1. Place lentils and water in a saucepan, and bring to a boil. Cover, reduce heat to low, and simmer until tender, about 30 minutes. Drain.
2. In a large bowl, mix together the cooked lentils, milk, wheat and barley cereal, eggs and walnuts. Season with onion soup mix and poultry seasoning. Mix well using your hands, as the mixture will be very thick. Let stand for 30 minutes, or refrigerate overnight.
3. Heat oil in a large skillet over medium heat. Use an ice cream scoop to portion out balls of the lentil mixture. Drop the scoops into bread crumbs, and coat while flattening into patties. Fry burgers in the hot skillet until nicely browned on both sides, about 5 minutes per side, depending on the thickness of the patties.0 -
