Berry Napoleons:
6 square won ton wrappers
2 cups mixed berries (frozen or fresh will work) or whatever fruit you prefer
2 tbsp powdered sugar
1.5 tsps granulated sugar
Cooking Spray
Preheat oven to 350*
Spray cookie sheet with cooking spray. Place won ton wrappers on cookie sheet and sprinkle each one with 1/4 tsp granulated sugar - place in the oven and bake for about 5-8 minutes, until lightly brown. *be sure to keep an eye on these, they will go from brown to burnt VERY quickly*
Remove won tons and construct on two plates stacking a won ton, spoonful of berries, repeating twice. Sprinkle the tops of each with powdered sugar and serve! Would be good with a little melted dark chocolate drizzled over top as well
Pina Colada Cake (or cupcakes) - from eatbetteramerica.com
1 box Angel Food Cake Mix (the kind that you just add water to)
20 oz can crushed pineapple
Toasted Coconut (optional)
FF or Lite Cool Whip (optional)
Cooking Spray
Preheat oven to 350*. Spray a 9x13 pan or line muffin pan with liners.
Combine angel food cake mix and pineapple (do not drain) - mixture will be very frothy and foamy. Pour into cake pan or muffin cups. Bake 20 minutes or until a toothpick inserted comes out almost clean. Let cool. Top with Cool Whip &/or toasted coconut, if desired.

Mine actually made 19 cupcakes, cals = 186... they're in the database as Taste of home chocolate cupcakes ( I also stuck hershey kisses in the center before baking, DELICIOUS!) the cals are no frosting and no hersheys kiss.0 -
