Healthy Family Dinners
Need some suggestions for healthy family dinners, lately I'm finding myself cooking 2 separate dinners, one for him and kids, and one for me.. becoming very time consuming!! Would really appreciate some healthy filling dinners that I can pass off to the family as "not diet food"

Can never go wrong with casseroles... usually, anyway lol
My favorite is the green bean casserole... YUM! Lots of different ways you can make it. I usually like fresh green beans (can't stand canned or frozen), cream of mushroom AND cream of chicken soup, lots of onions (sauteed with the green beans, chopped up small so the kids can't see lol), chopped chicken breast, small amount of cheese and some fried onions to top it off/mix in for crunch factor.

I know this feeling. I do the groceries and the cooking and then I get asked "why are we eating rabbit food". So for him, I just put some wedges in the oven and he is usually pretty happy.
The other thing I do is get out one of my magazines (Donna Hay this week) and asked him if he wanted to pick a couple of recipes. They are usually pretty healthy, but if there is something in there that is chocka with calories (eg chorizo was an example this week) I leave it off my plate, or just have a very small helping of it.0 -
I never understand these posts... why would you make unhealthy food for your family?
If your husband or kids need more calories, just give them larger portions of your healthy food.
I guess I don't really understand the question... I don't eat diet food, I eat healthy prepared food, and when I have a family, they'll eat the same things I do. I'm a picky eater, so if you mean the kids won't eat X and Y, I can relate. I mostly find a dish that I like and then integrate new things into that dish. Like once I added eggplant (didn't know if I liked it but wanted to try it) to my succotash (which I love). Turns out I hate eggplant but I was able to pick out the big pieces and just eat the small ones because I liked everything else. Fritattas are another good option for hiding vegetables. I make mine with textured vegetable protein in lieu of breadcrumbs for more protein goodness0 -
Just feed them what you eat. That's what I do. There's a rule in my house, that I will not make special food for anyone else, everyone eats what I serve or they just don't eat. I know that may sound harsh, but I'm busy enough.
But I did find that my kids will eat just about anything mexican; tacos, burritos, lasagna. And you can make all of those in a healthier version. Their favorite chicken burrito that had last weekend which is completely stuffed is under 250 calories.
Just swap out things for healthier options and don't tell them. My kids never knew they were eating turkey and chicken when they thought they were eating beef. They were shocked, I thought it was hilarious.0
