I love to make this in my crock pot...I take lean beef or lamb and place it on the bottom, season with Italian seasoning...then a thin layer of potatoes...and on the top frozen veggies, lima beans (just a few, they can be high calorie), corn, string beans, onions and celery. then I take a can of low sodium, diced tomatoes. I like the Italian flavor. Let it hang out a few hours, stir and let it cook a few hours more on low...Voila...very satisfying.0

Had this for dinner tonight
Spinach and Blue Cheese Soup
Serves 4 (apparently, I got 5 large portions out of it which worked out at 169 cals a portion)
300g Spinach leaves (also works well with watercress)
600g potato
2 bunches spring onions
3 pints veg stock
80g blue cheese
Spray a pan with low fat cooking spray, chop and saute the spring onions until softened.
Grate the potato (with skin) and add to the pan with veg stock and simmer until potato is cooked.
Add in the spinach and stir until wilted.
Blend until smooth and top with crumbled blue cheese to serve0 -

Portobello and Lentil Slowcooker Soup
Makes 6 servings: 241cal, 27prot, 5 fiber (I dont' know about the other stats, as I'm focused on those three for right now...)
Generic - Portobello Mushroom Cap, 8.01 oz.
Oil - Olive, 1 tablespoon
Onions - Raw, 1 medium (2-1/2" dia)
Carrots - Raw, 2 medium
Garlic - Raw, 2 clove
Lentils - Cooked, boiled, without salt, 1 cup
Unico (Canada) - Canned Diced Tomatoes, 28 z or 796 ml
Homemade - Chicken Broth, 1.81 cup
Shrimp - Cooked, moist heat, 450 g
Layer oil, onions, carrots, garlic and lentils on the bottom of crock pot, and put the tomatoes and mushrooms on top. Pour chicken broth (or vegetable broth) over. Cook for 8 hours on low.
The original recipe doesn't call for shrimp, but I added it for extra protein, and the original recipe calls for veggie broth, but I didn't have any when I made it.

Spicy Lentil soup
Put the following into a small saucepan, bring to the boil and simmer for 30mins
50g red lentils
2 carrots
I white/spanish onion
I pint of stock made with 2 tsp bouillon
pinch ginger
tsp garam masala
tsp ground coriander
pinch turmeric
juice of 1 orange and a little zest
garlic clove
Once cooked just blend and serve. You can add a little milk if you like before serving
I made some yesterday and it made 2 servings. Lovely and spicy0
