Hi Everyone,
I bought the Biggest Loser Cookbook for my Kindle and I found a great recipe. This is outstanding and very easy to make. Very aromatic and tasty. Says Fried but really is baked. Enjoy.
"Fried" chicken
3 tablespoons fat free plain yogurt (or just plain) Or a full 6 ounces of it.
4 large basil leaves chopped
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh thyme leaves
1/4 teaspoon garlic powder
Pinch of salt to taste
Pinch of ground black pepper to taste
4 Tablespoons Panko Bread Crumbs (or more)
2 small (4 ounce) boneless, skinless chicken breasts, trimmed of visible fat - pound to flatten to even thickness.
Preheat oven to 400. Mist a non stick baking sheet with olive oil or PAM spray
In medium shallow bowl combine the yogurt, basil , oregano, thyme, garlic powder, salt and pepper. Stir to mix well./ Place 2 tablespoons PANKO breadcrumbs
in another medium bowl. Dip 1 chicken breast in yogurt mixture then transfer to bowl with PANKO crumbs. Repeat with second breast.
Place on baking tray. Do not allow chicken to touch. Bake for 10 minutes, flip and bake another 10 minutes.. Serve immediately with mustard or marinara sauce on side, if desired.
Sorry I forgot to tell you that serving size of 1 breast is only 173 calories.
