Pumpkin Protein Bars

I made these last weekend from a recipe I found online and was so awesomely surprised! These are amazingly good, moist, and low calorie, carb, sugar, but packed with protein! I think the calories will vary depending on which protein powder you use, mine ended up being only 65 calories apiece. They come out a little more cake-like than bars, but so so good. Enjoy!:drinker: :flowerforyou:
Pumpkin Protein Bars
makes 9 bars
gluten/grain free, sugar free, low in carbs and calories, and of course high in protein!
4 TBS coconut flour
3/4 cup vanilla protein powder
2 teaspoons cinnamon
nutmeg and pumpkin pie spice to your preference [I used 1/2 teaspoon nutmeg, 2 t of p.p spice]
1 teaspoon baking powder
pinch of salt
6 egg whites
1 cup pumpkin puree
1.5 t vanilla extract
stevia to taste(I used splenda instead as I don't have any stevia)
Add wet to dry.
Spray 8×8 pan, and bake for 30 minutes at 350F - cut into 9 bars when cooled

Calories -65g
Carbs- 4g
fat - 1g
Soduim - 146mg
Sugar - 1g
Protein - 10g

I found coconut powder at my local whole food store. The brand is Bob's Red Mill. It was kind of expensive, but you only use 4 tbs in the recipe so it should last a while.0

That's funny I actually came across this same recipe over the weekend and tried them out... I personally did not like them at all. Very boring, they need more flavor and could use a moister texture.. Just curious if anyone else made these..?? I will probably try them again but make my own tweaks. Will post a recipe if I am able to improve the original0
