I made this up and it comes out beautfully, like something on the cooking channel.

I eat it for dinner when I am short on calories for dinner and if I over carbed it during the day.

I usually weight in low the next day when I have this for dinner.

Ingredients:

1 cup frozen spinach (thawed and dried well)
Half an onion diced
1/2 cup of mushrooms
2 T Olive Oil
A little garlic, fresh or powder
1/2 C shredded cheese of choice I used full fat, low fat would work too)
5 eggs beaten

Saute onions and mushrooms with olive oil and garlic in a medium pan until tender. Then add spinach and cook until soft.
Top with shredded cheese, poor eggs over the top.

DO NOT STIR.

Turn burner to low and cover until firm.

I like to top mine with salsa.

The menu maker says 896 calories for the whole pan.

About 1/3 of the meal was the perfect size for dinner, 1/4 was just right for breakfast. Super filling, pretty and tasty too!

You could likely get away with just about any veggie combo you preferred.
