"Sly Stallone" Pizza (High Protein)
I can't take credit for this creation - I got the recipe from a Men's Fitness issue. Made it tonight and it was awesome!

This is 2 servings, which I struggled to eat - I think a single serving is a good amount with a side salad.
Ingredients (serves 4)
For the base
450g lean turkey mince
1tbsp ground flaxseed
115g dry wholemeal breadcrumbs
½tsp baking soda
½tsp garlic salt
Pinch ground black pepper
For the topping
2 roasted red peppers from a jar, drained
250g passata (sieved tomato sauce)
1 garlic clove, crushed
200g low-fat grated mozzarella or half-fat cheddar cheese
½ red pepper, sliced
60g black olives, pitted and halved
1 handful rocket
Method
Step 1 Preheat the oven to 220°C. Mix all the base ingredients together in a bowl, then spread the mixture on a non-stick pizza pan. Cook for 5 minutes on one side, then carefully turn it and cook for 5min on the other side until browned.
Step 2 In a blender, process the roasted peppers, passata and garlic until smooth. Spread this sauce over your base then top with the grated mozzarella, red pepper, rocket and black olive halves.
Step 3 Bake for 10 minutes, allow to cool for 5, then get stuck in.
295 Cals/serving, 18 Carbs, 9 Fat, 33 Protein.
