Carnitas!?!?!?!?!!? Yummmmm

As part of a low Carb diet I have been eating alot of meat..............And right about now this awesomely tanned man is craving some Carnitas!!! I love the belly, and the skin!....ymmmmmmmm
im thinking of a nice red salsa and some lime to add to this!!

FYI Carnitas is pork meat cooked in..................Lard.....BUT damn they are tasty!0

I do love carnitas and if you go to the Skinnytaste website, you can find some recipes that wil be better for you healthwise. I haven't made the carnitas from this site, but everything else I've made has been excellent.0

Carnitas don't necessarily need to be cooked in lard. I trim excess fat and braise the pork in El Pato Salsa de Jalapeno with a little bit of chicken stock - cook till tender and shred. Delicious and lean!0

I made barbacoa, and I just made it in a bunch of broth and spices. I simmered it for like 12 hours. Omg.0

Carnitas.....MUY RICO! We have a little Mexican store near our house and they do traditional Carniitas every Sunday. We get them once a month or so. My wife is from Mexico and we drove down there a couple years ago. Had some Cabrito (goat) and Birria (a consume' made from the cabrito drippings). WOW! Some of the best food I have ever had was at a few of the "hole-in-the-wall" places we ate on the way down. Nothing better than traditional Mexican food. Pozoli Verde and Albondigas are two more of my favorites.0

Yummy! Try making them by adding a cinnamon stick, can of evaporated milk and can of coca cola to a pork butt roast. Cook in crockpot on low all day. Mmmmmhmmmm....0

I have made these numerous times, using this recipe, and they are delicious! I too love the fat :-) Low-carb here as well, so lots of meat! Even though I always end up making them way too spicy, add a little cheese and sour cream, and good to go. Just make sure to get the low-carb wraps instead of the normal ones. I actually think they taste better!0 -
