Zucchini pancakes

I made a batch of these for dinner tonight. It was supper yummy and almost like potato pancakes but with way less carbs. Hope you like it!

Ingredients

1 Zucchini, grated
1/2 cup Ricotta Cheese (part skim)
1/4 cup Whole Wheat Flour (I use gluten free/ wheat free flour)
1/2 teaspoon Oregano
1/4 teaspoon Onion Powder
1 Egg, beaten (I used egg beaters)
1/4 cup Parmesan, grated
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
1 tablespoon Olive Oil or Butter (i used olive oil)

Combine all ingredients but oil. Heat oil in pan. Drop dollops of zucchini mixture into pan and cook in batches. Flatten with a spatula and cook about three minutes each side till golden. Makes 8.
