Humus

I'm looking for a good humus recipe. I've made one and really wasn't impressed with the flavor, too much garlic I think. I've had some that I like but generally it was at a party and I didn't get the recipe. I am open to trying new and unique renditions people have tried or played around with.

    I like mine garlicky. You can adjust the garlic. Also, if you roast the garlic it will tone down the flavor.

    Here is my go to recipe.

    2 cans cannellini beans*rinsed

    about 10 to 12 cloves of roasted garlic or 2 raw cloves-adjust to your preference

    1/4 c olive oil

    1/3 c fresh squeezed lemon juice

    1/2 teaspoon of sea salt or kosher salt to taste

    1/4 teaspoon of cayenne pepper to taste-optional

    Blend, chill and serve. It's better the next day. You can also sprinkle with roasted pine nuts before serving.

    Hummus varies by region. The woman who taught me how to make it was from Saudi Arabia, and her version in by far my favorite. I learned how to make it by taste so I am not positive the actual measurements.

    1/4 cup water
    1/6 cup olive oil
    2 cloves garlic, minced
    juice of 2-3 lemons (about 3 Tbsp)
    3/4 tsp salt
    1 Tbsp cumin powder

    Instead of water I use the liquid from the chickpeas

    use garlic powder instead--i stopped using raw garlic but roasted is fine

    I have a food blog and this is a twist on hummus that I came up with. It isn't traditional, but it is really delish!! And so inexpensive i made the whole recipe for less than $2.00.

    i prefer to make it with dried chickpeas, much nicer!

    either soak chickpeas overnight or put in crock-pot on hot for 4 hours with a bit of baking powder

    save juice but drain. Leave to dry out a bit

    add to blender, blend for a while

    add 4 cloves of garlic, a handful of fresh parsley and blend for a bit longer

    slowly add around 1 - 11/2 cups of the juice from the crockpot

    add the juice of two lemons

    buzz for aaages until creamy

    add half a jar of tahini

    finally, add 3tbsps of cold-pressed organic olive oil.

    I just buy it... I love the sabra brand.. lots of flavors too :) but my fav is the classic hummus

    This one combines my two favorite things!

    Siracha Hummus
    1 - 16 oz can of chickpeas, drained and rinsed

    3 cloves garlic, peeled (less if you don't like garlic b/c Siracha already gives it kind of a garlic flavor)

    2 TB lemon juice (I omit this as I don't like lemon in my food_

    1/2 tsp kosher salt

    1 TB tahini

    1/3 cup Sriracha (use less if you want a milder hummus)

    Throw everything into a food processor or blender, and process until smooth.

    This is a sweeter hummus
    Ingredients:

    1 15 ounce can chickpeas, drained (garbanzo beans)
    1/4 cup olive oil
    1/4 cup sun-dried tomatoes in oil or rehydrated
    2 tbsp lemon juice (Again I omit)
    3 cloves garlic
    1/2 tsp paprika
    2 tbsp water
    1/4 tsp salt

    Preparation:
    Process all ingredients in a food processor or blender until smooth, adding more liquid if needed. That's it! Enjoy your homemade hummus.

    I make my Hummus thicker... Mostly because I don't want all the calories from the amount of Tahini and Olive Oil that a lot of people use.

    I use dried Garbanzo beans, soak overnight then cook in a crock pot... use about a cup/cup and a half of cooked chick peas
    2tbs tahini
    2tbs olive oil
    7 or 8 garlic cloves
    LOTS of Black pepper (I like mine with a little heat)
    about 1/4 cup of cumin
    about 1/4 cup of lemon juice
    red pepper flakes to taste blend and voila
