beef stock

If I boil beef in beef stock just to make it tender how do I log that ? im not "eating" the stock im only boiling the beef in it?

I would make a mirepoix, and add just an inch or so of liquid and simmer it for 3 or four hours covered. First I would sear the meat.0

Beef stock really doesn't have a lot of calories so much as it does sodium. the beef wil absorb some of the liquid and flavor, so I would go with Swanson's no salt beef broth (it's like 25 cals for a serving) and that way you'll cut down on calories and sodium. One serving should be enough for what the beef will absorb.0
