Honey Chicken Stir fry

I bought the comfort food diet cookbook and made this tonight. It was really good. I made it with 1 lb of shrimp instead of chicken.

Make sure you add the right amount of salt and pepper it makes all the difference, I didn't add enough to begin with. Plus I added a couple of dashes of red pepper flakes too, and put a dash or 2 of tabasco flavored soy sauce.

Honey Chicken Stir-Fry

1 pound boneles skinless chicken breasts, cut into 1 inch pieces
1 garlic clove, minced
3 teaspoons olive oil, divided
3 tablespoons honey
2 tablespoons reduced-sodium soy sauce (I used regular)
1/8 teaspoon salt
1/8 teaspoon pepper
1 package (16 ounces) frozen broccoli stir-fry vegetable blend
2 teaspoons cornstarch
1 tablespoon cold water

--In a large nonstick skillet, stir fry chicken and garlic in 2 teaspoons oil.
--Add honey, soy sauce, salt and pepper, cook and stir until chicken is lightly browned and juices run clear.
Remove from pan and keep warm.

--In same pan, stir fry vegetables in remaining oil for 4-5 minutes or until tender.
--Return chicken to the pan; stir to coat.
--Combine cornstarch and cold water until smooth; gradually stir into chicken mixture. Cook and stir for 1 minute or until thickened.

Serve with rice.

    This sounds great! Just a suggestion to make it even healther, supplement Agave Nectar for the honey, it is a much lower GI food and natural so it does not cause your insulin levels to spike :)

    Honey is about 60-85 on GI scale and Agave is only 11-30 typically

    Lower GI means less of an Insulin spike and less inflammatory towards your body !

    I thought of using some agave maybe even 1/2 and 1/2 for that reason, but found it wouldn't be thick enough for this particular recipe. Maybe if more cornstarch was added.

    Sounds great... does anyone know if anything can be substituted for the cornstarch? I don't have any, but I'd like to try the recipe! :flowerforyou:

    Made this for dinner tonight. It was delicious. I had to put the will power into affect to not go for a second helping. This will be my lunch for tomorrow.

    Made this again tonight, this time for the whole family. Everyone loved it. I only used cauliflower and broccoli because those are the only vegetables my husband and son will eat. It was still delicious.

    I will be making this again.

  • Made this for dinner last night with half chicken and half shrimp.... OMG!!! It was awesome!!!!!!! Had leftovers for lunch today... I think I'm addicted.....

    OH MY GOD! I'M IN LOVE! I made this in 3 batches. 1/2 of my batch was chicken the other 1/2 was tofu and for my boyfriend and his son they got shrimp.

    The little man has asked for this to be cooked once a week when he comes to visit :) Thank goodness he's not asking for mac'ncheese and hotdogs or hamburgers anymore. But now hes onto the expensive seafood kick. Oh well as long as he loses weight we'll be happy.

    Hi, just made this recipe, thank you so much for posting it, I thought it was absolutely delicious! I didn't do it exactly as you wrote it: I used water instead of oil to stop the chicken from sticking and I didn't add in water and cornstarch. Instead I did it up to the water corn starch stage and then ate it with a few noodles as a stir fry. It was delish! xxx
