Coconut Flour

While ordering some PB2 on Amazon last night, I came across something new to me, coconut flour. Did a quick google search and read that it's supposedly very healthy, but tricky to bake with. I'm intrigued; have you used it? Do you like it? Any tips on using it? Recipes?

I've been wondering about this too! I'll be interested to see what folks have to say about it:) I haven't tried the PB2, but have tried "Better than Butter" and I really like that (it's a bit sweeter than reg PB, but def doable). Is this your first time trying PB2? If not, how does it compare to reg PB?0

I recently had to begin a gluten/dairy free way of life. I've learned (only from reading so far) that to bake gluten free a mixture of different flours will work like wheat flour in the baking process. There are many good sites for gluten free baking. The most recent I checked was one called Living Without. I found it by doing a search for gluten and dairy free recipes. Good luck!0

I used the PB2 in a breakfast shake recipe, and it was delicious! Definitely an acceptable replacement for the real thing.0 -
The biggest difference with coconut flour is that it takes a crazy amount of moisture for a seemingly small amount of flour. I have recipes that call for 1/2 c. coconut flour and 6 eggs for moisture and binding. It's a little tricky, but it's a great gluten-free baking alternative.0

I love coconut flour!!! I have both baked and fried with it, and as you are right it can be tricky it is wonderful in coconut bread and I make an oven baked coconut chicken that my daughter (11) loves. I also use a lot of coconut oil instead of the traditionals. This too can be tricky to use, but delicous.0

I saw some at the health food store and decided to try. So far I've only made brownies, and they came out pretty good. The texture was a bit different, and they were slightly drier, so I think the comments on the moisture are right.
My boyfriend liked them too, although not as much as my usual brownies I make!0 -

Look up Paleo recipes also...they use it alot in their baking. I like the website www.fastpaleo.com0

I actually just used coconut flour for the first time tonight to make chocolate chip cookies. Of course not as good as the real deal, but now bad either. They dont flatten out like a normal cookie would. But it could be the recipe I used as well. I tend to do lower carb is why I used it.0
