Awesome Taco Pie Recipe!

I found this recipe on Pinterest and had to try it! My version of this recipe (I'll make edits within) is only 445 calories! Great for a dinner meal!
Serves 4 (For a smaller and lower calorie meal, you can increase the servings!)
Do you have leftover potatoes and no taco shells or tortillas? Then this is your recipe! I always have leftover mashed potatoes and now I know a way to use them! I love this because it is so simple, different, but tastes absolutely delicious!
Ingredients
1/4 cup butter
2/3 cup milk (**I used unsweetened almond milk. Tastes the exact same!)
1 package taco seasoning mix
2 1/2 cups mashed potato flakes (you could also use left over mashed potatoes and omit the butter and milk) (**I used real potatos, about two medium ones. Just boil until soft, drain, then add the milk, butter, and taco seasoning - see directions below.)
1 pound ground beef
1/2 cup chopped onion
1/2 cup salsa (** Used Tostitos Chunky Medium Salsa)
1 cup shredded lettuce
1 medium tomato, chopped
1 cup sharp cheddar cheese, shredded
Sour cream, optional (**Don't care for it, so didn't use it.)
Directions
1. Preheat oven to 350 degrees. In a medium sauce pan, melt butter. Add milk and 2 tablespoon taco seasoning. Remove from heat and add potato flakes until incorporated. Press mixture into the bottom of a 10-inch pan. (**Again, I used real potatoes, so I mixed all the ingredients in together with the potatoes, then mashed them.)
2. Bake for 7-10 minutes until it just BARELY turns golden brown.
3. In a medium skillet, cook beef and onions until beef is browned and cooked through. Drain. Add Salsa and remaining taco seasoning. Cook until bubbly.
4. Pour into crust. Bake for 15 minutes, or until crust is golden brown.
5. Let cool for 5 minutes. Top with cheese, lettuce, and tomatoes. Cut and serve with sour cream.

This does sound good. I think I will try it. But instead of the Tostidos Salsa, Im going to use my homemade salsa, with homegrown tomates and peppers and onions. Yummm. Thanks for the recipe.0

Here is a great salsa recipe...
• 6 pounds of roma tomatoes
• 1 green pepper
• 1 medium white onion (or you can use 2 or three bunches of green onions)
• 1 bunch of cilantro
• 5 or 6 jalapeño peppers (keep tasting to see how hot the salsa is getting—it’s difficult to determine because sometimes peppers are really hot, sometimes not so much)
• Salt to taste
• Juice of 1 lemon
• You can add 2 or 3 cloves of garlic—sometimes we do, sometimes we don’t
This makes a big batch. Chop all ingredients up together. We use a manual food chopper or you can use an electric one, you just have to pulse it and be careful how liquid you make/like your salsa. If you like it chunky, pulse less.
