Whats a good recipe for dinner for one?

Hello my hubby is at work tonight so its just me for dinner. I dont want to go crazy over board like i usually do. So i was wondering if anyone has a recipe out there for one? Thanks :)

    I like to take a boneless chickin breast and put it in some tinfoil with some sliced onion, olive oil and seasonings (I like garlic powder and a little mrs. dash onion and herbs). I wrap it like a baked potato so the juice doesn't run out and then broil it for like 15-20 mins. Put it over some basmati rice! Yummo!

    frozen fish usually comes in packets of two. just take out one filet, season, and bake in the oven for about 20 minutes. in the meantime saute some veggies in a pan. easy and delish!

    Chicken sausage (I like the roasted red pepper ones), peppers, mushrooms, carrots and zucchini. Throw it all in a pan with the seasonings of your choice and bake @ 375 for 30 mins. Yum!
  • i take a piece of foil spray with canola spray then lay a piece of boneless skinless chicken on it squeeze a lime over top then a teaspoon of hidden valley spicy ranch mix then 1-2 tablespoons of Parmesan cheese wrap it like a back potato and cook at 350 for 30 minutes

    A Can of Tuna, Bag of Frozen Veggies, Little Lemon Juice and Seasonings. Stir Fry! This is enough for two, but even if you eat the whole thing (I usually do) it's only 280-300 calories! And its a LOT of food!

    If there is a Fresh & Easy store near you they have REALLY good food portioned specially for one or two people, its very healthy and inexpensive!!

    There is one meal they have with permisean breaded talapia... delish!!!
