How do you make mock mashed potatoes

I heard it was with cauliflower Do you boil it or steam it, then mash it do you use milk and butter, is it actually good?
sorry I love mashed potatoes and only like cauliflower, oddly my kids love cauliflower and only like mashed potatoes so if this turns out good it would be a great side a few times a week. thank you.

    I've made mashed cauliflower by boiling/steaming cauliflower in the microwave until it is soft, then adding a little bit of milk and butter, like you said. I thought it was pretty good! Consistency is definitely a little different, but still good. That said, mashed potatoes really aren't that bad for you, as long as you don't load them up with butter, sour cream, etc., and eat a controlled portion. Potatoes are high in potassium, and are worth working into your food 'budget' every now and then. :smile:
  • i think the best option is to do half cauliflower and half potato. it has a better consistency, the nutrition contained in both, but less calories than potatoes alone. and you can mash them with chicken/vegetable stock and olive oil as a substitute for milk and butter!

    Another good way to cut your potatoes is with turnip. It's so good (and I generally don't like veggies). :)
  • I am huge mashed potato fan... I have tried it 1/2 potato and 1/2 cauliflower it is really good... I season it with oikos plain greek yogurt, salt, and pepper.. it is def worth trying once... just steam the cauliflower tills its soft and mash it in with your potato ;)
