Here's one I LOVE for turkey meatloaf muffins. Tastes just like regular meatloaf to me!

Oats are SO much better than breadcrumbs in stuff like this - thanks for posting this recipe - stealing it :)

    Ooo! Ooo! Ooo!

My husband is out elk hunting this week, which means I have control of the kitchen and I went out and bought tons of turkey tonight. I'm making a turkey-quinoa meatloaf on Sunday, using this recipe:

    http://allrecipes.com/recipe/turkey-and-quinoa-meatloaf/detail.aspx?event8=1&prop24=SR_Title&e11=turkey quinoa&e8=Quick Search&event10=1&e7=Home Page

Tonight I actually made a Spiced Turkey Sausage Stirfry with penne pasta and sugar snap peas and red bell pepper strips. I tucked in 4 ounces of the low fat cream cheese at the end and the kids ate it up with gusto. Tomorrow night is going to be turkey lettuce wraps and potstickers. I'm feeling the love of turkey right now!

This recipe from Bobby Flay for Vegetable Meatloaf with Balsamic Glaze is amazing...so flavorful and never dry! Easy to make. I've also used a muffin tin to make 12 individual portions. Only takes 25 minutes to cook that way and they're already portioned. I've also substituted lean ground beef (90%) and super delicious. The only meatloaf I make now :-)
