What to eat while traveling!?

Hello,
I will be travelling about 3,000 miles by bus, travelling straight for about 3 days. Only with 4 bus transfers, longest lay over is an hour.
I'm moving from Oregon to New Jersey, I need to eat healthy because I get sick (migraines, horrible stomach aches, fibromyalgia acts up, etc.) if I don't.
What sort of easy foods besides nuts, fruits, etc. like... more specific can you guys help me with?

Any help is much appreciated!

    I travelled once from Eugene, OR to OH by bus. It was quite a trip! I did like you...nuts and fruit. Plenty of water [make sure you carry a bottle with you]. You won't have much time for any quality food, so just try to find the best you can whenever and wherever you stop.

    Can you find out if there will be other stops along the highway @ restaurants, etc. and what kind? The bus stations we changed over in didn't have very much in the way of nutrition at all.

    When I'm travelling I like tins of baked beans - super healthy, satisfying and doesn't require any special storage (just don't forget a spoon)
  • I'm concerned (first time travelling alone, and the first time I will have ever traveled by bus (I was homeschooled and then went to a private school)) that there won't be time to go to the bathroom, even if there are bathrooms available. I can send you the schedule transfers.. I have the whole, stops, etc. but since I don't know you....... I figured I probably shouldn't.
    I'll look and see if they're any stops along the way that I'd be able to do.
    How much time is there usually at the stops to get out and stretch, get food, go to the bathroom, etc.?

  • I will only be able to take 3 bags with, and my service dog is coming with and the two carry-on's are going to have Bella's (service dog) stuff in it, along with some of my stuff and food as well.

    I work on the road, so I'll pack little snacks all the time. I'm assuming you have a little cooler?

    Carrots and hummus (individual packs of hummus that I get from Costco)
    Chicken foil packs w/ some mayo or the tuna snack packs
    Apple slices
    Yogurt
    Grilled chicken in a wrap with lettuce, tomato, onion and hummus
    Granola bars (with peanut butter for a few extra calories)
    Pretzels
    I'll make a container of Quinoa and keep it in my car for a couple days w/o refrigerating. Delish!
    Cheese slices (Harder cheeses don't even need refrigeration for several days. I take cheese backpacking.)
    Boiled eggs (Great at cooler room temperature for a couple of days.)
    Oranges
    Bananas...I could go on and on here!!

    One of the key things I pack is Vegan Dream Jerky. I order it online. Even if you're not specifically needing vegan food, it's very tasty, low cal, high protein. And light.

    I've had sharp cheddar last 4 days...and that was in the summer hiking.

    Pretty much if you google hiking food, you're going to find some great ideas on what to pack. It's like my back country trips without a stove!!!!

    Another idea - PB & J's ...and of course jerky!
