Carb Haters and Birthday

I've seen many, many of you avoid carbs. Tomorrow night I need to cook for a friend who apparently has sworn off carbs since last time I've cooked for him. Any suggestions on what carb haters eat for side dishes?

Also... we're celebrating my wife's--and his girlfriend's--birthday. I've already ordered a cake for the girls, but what should I make or buy for him?

I'm trying to be a supportive friend so any ideas are appreciated!

    Chicken is good... with salad/mixed greens and a nice soup perhaps?

    Green beans with sliced almonds tossed with a little bit of butter, you can get this in the freezer section in most grocery stores. My mother is a carb hater so I know how you feel. I wouldn't go out of your way for dessert, your being kind enough to accommodate dinner for him. But if you must maybe buy some carbwell "icecream" and regular icecream to put on top of each slice of cake.

    I like steamed vegetables, with butter and garlic pepper. I also like to have low carb "mashed potatoes" using steamed cauliflower with cream cheese and butter. Very delicious. Check out the Atkins.com website for numerous low carb recipes. I'm sure you will find something. If you are interested in the "mashed potatoes" let me know.

    I only ask because you all gave examples of things with carbs. Thanks! :)

    For dessert you can make chocolate covered strawberries. Buy sugar free dark chocolate bars. Mix with a splash of heavy cream and melt down in a double boiler.

    Carb haters do eat some carbs, Strawberries are low in carbs and the sugar free chocolate uses sugar alcohol and won't affect his low carb diet.

    I wouldn't say grain haters but grains tend to be higher in carbs than most other foods.. and ofcourse your sugars... but you can find those in fruit too. Its really hard to find carb free foods but most people tend to eat low carb foods if they are avoiding it.

    I eat carbs now but in the past did Atkins for quite some time.

    I don't know how low carb your friend is eating but even the most extreme version of low carb allows 20grams of carbs per day.
    Any "carb hater" need to eat 20grams minimum and if he has been doing it for longer he may well be eating double that.

    acceptable side dishes would be:
    any leafy green salad (arugula, spinach and romaine are particularly low) with a vinaigrette dressing you could add bacon crumbles to that as well,
    any type of cheese, triple cremes on endive are really tasty
    black olives,
    pate on celery stalks or endive leaves
    roasted red pepper and asparagus antipasto,
    cucumber & mint salad
    broccoli & melted cheese,
    I could go on.......... All of the above have less than 5 carbs per serving and some have less than 1 carb per serving!

    For desert your best bet is sugar free jello with whipped heavy cream (make sure the cream has no added sugar)

    Thanks for the ideas guys, and thanks meokk specifically for the tidbit above. I guess when people say they don't eat carbs, they really don't mean that and are just saying it because it's easier than explaining the whole story. lol :tongue:
