  • Hi Rooster, my husband and I like to make a low cal version of chili. Here are the ingredients:

    Ground Beef, 80% lean meat
    1 Garlic Clove, Minced
    1 Green Bell Pepper, chopped
1 can Sun-Vista - Pinto Beans - No Salt Added
    1/2 cup S & W - Ready - Cut Diced Tomatoes Italian Recipe
    Oregano, dried, 1 tsp
    Ground Cumin, 1/2 tsp
    Black Pepper, Ground, 1 tsp
    Cayenne Pepper Spice, 1/2 tsp
    White Onion, Diced, 1 cup
    Tomatoe Paste, 1/4 cup

Just brown the ground beef and pour off fat. Add the onion and bell pepper and cook for a few minutes until they begin to soften. Add the remaining ingredients. Add water as needed. Add chili powder or a bit of dried chili flakes if you like it spicy. Cook for about 20 minutes, and it's done! I hope you like it!

Mine is not really "homemade" because I use a seasoning packet but this is it: I ground 90% lean beef and drain. I add 1 package tex-mex chili seasonings from McCormick, 1 can dark red kidney beans in juice, 1 can bush's best chil beans medium, 1 can diced tomatoes - fire roasted, 1/4 cup chopped onion and 1 tsp garlic. That is it. I used to serve wtih Frito's but that is one of the things I cut out so I am trying to serve over brown rice.

If Chili is ever too spicy just counter it with regular or Brown Sugar....I like my Chili spicy sweet so I add it either way....

My recipe is a crockpot recipe bc Chili is better the longer it cooks! :)

1 lb of whatever meat you like; I use Venison 99% of the time,
    1 large diced onion
1 large diced green bell pepper
    1 cup diced celery
1-28 oz can Diced Tomatoes (No Salt Added)
1-14 oz can No Salt Added Tomato Sauce (Only use half)
    2 T Chili Powder
    1 1/2 t Cumin
1/2 t Salt and Pepper or to your liking
    2-3 Cloves of Garlic diced
    1 can kidney beans

Brown the meat with a little garlic powder and drain. Add all ingredients into the crockpot EXCEPT the beans. Cook on high for 4 hrs or low for 6. Add beans 15 mins prior to serving and cook on low. I've always have had this demanded to be made for parties and events and won a chili cook off with it. :) It's delicious!

Ok, I bought a bag of kidney beans instead of the can. Do I have to soak them first?

Also, can I just use a regular recipe and leave out the meat?

Yes, you really should. This helps explain why. :)

Thanks! My hubby has Crohn's and he can't eat chili. But I love to eat it once in a while in the winter. I was thinking that I might make a batch just for lunches and bought dry beans and chili powder at the store. I haven't made it in so long!

That's a great link! I was just thinking that a vegetarian chili would be good for lunches instead of using up our "dinner meats" for it.

    * Brown onion and turkey in large pan.
    * Add tomato sauce, tomatoes, and chili powder.
