CRAZY foods/recipes only dieters will try

One of my new favorite Diet friendly snacks is "brownie batter bites" made with lima beans, steal cut oats, unsweetened cocoa powder, stevia, vanilla and PB2... All of my non dieting friends are not as crazy about it... buy hey... it sure beats eating Lima beans plain!

What weird foods/recipes have you tried that you wouldn't try unless you were on a diet... I mean lifestyle change :)

    Avocado chocolate pudding. Sounds disgusting, but i tried it, and its freekin awesome!

    @BR3ANDA it is really good! I use it as a fruit dip :)

    also, brownie mix + 1 can of black beans = amazing but my non-dieting coworkers wouldn't even try them.

    tofu shiritaki noodles in place of lo mein noodles

    Chocolate Chip Cookie Dough Dip from chocolate covered katie's webpage.
    It's made with chickpeas but you really can't tell. My 4 yr old nephew who is beyond picky ate a half a bowl by himself with graham crackers & apples. We obviously did not tell him it was healthy.

    Boil 1 cup dry lima beans in a crock pot over night... Drain, put in a food processor with 1 cup of dry quaker oats, I don't really measure... but I put about 1/6 cup of unsweetened cocoa powder, about 1/6 cup of stevia and about 1/6 cup of PB2... or about 20 mint leaves instead if I'm wanting a minty taste instead of a peanut butter taste, and maybe 3tbs of vanilla... blend, chill, and enjoy :)

    cauliflower rice! It's amazing, but yeah, I would never eat it if I could have all the white rice I wanted!!! :)

    If anyone's curious, it's just finely chopped cauliflower heated up in the microwave for about 4 minutes (if memory serves me, you may want to keep checking after the 2.5 min mark). No need for water because it uses it's own natural water. It steams up right nice, and is firm and tender and has the same texture as rice. I even put it in tomato soup once! Not the same, but a decent substitute!

    I made deviled eggs once, and instead of mayo, you mix the yolk with greek yogurt, honey, mustard, and paprika.... absolutely disgusting.. and I think they would have been lower calorie if they were just mixed with miracle whip. ack lol
