I bought a can of coconut milk and have completely forgotten what I was going to do with it. Does anyone have any good suggestions?

I thought I had more than this, but it's still a good representation. These are of course vegetarian/vegan but you could easily add chicken or fish or whatever.

I know. I actually made a vegetarian version of this and it was very yummy.0 -
Make coconut icecream in small dishes. It freezes very well.0

Peel & chop an onion and a butternut squash. Sauté onion in a little oil. Add chopped garlic, some ginger and chilli. Add pumpkin/squash and sweat for about 5 minutes. Add coconut milk, stock and a splash of fish sauce (Nam pla?) Simmer for 25 minutes until squash is soft. Zuzz with a hand blender. Serve with a squeeze of lime juice.0

I'm not sure if you like Tofu or not, I'm not a big fan but a friend made this once and it was pretty good!
Coconut Curry Tofu
Recipe makes 6 servings
Ingredients-
2 bunches green onions
1 (14 ounce) can light coconut milk
1/4 cup soy sauce, divided
1/2 teaspoon brown sugar
1 1/2 teaspoons curry powder
1 teaspoon minced fresh ginger
2 teaspoons chile paste
1 pound firm tofu, cut into 3/4 inch cubes
4 roma (plum) tomatoes, chopped
1 yellow bell pepper, thinly sliced
4 ounces fresh mushrooms, chopped
1/4 cup chopped fresh basil
4 cups chopped bok choy
Salt to taste
Directions
Remove white parts of green onions, and finely chop. Chop greens into 2 inch pieces.
In a large heavy skillet over medium heat, mix coconut milk, 3 tablespoons soy sauce, brown sugar, curry powder, ginger, and chile paste. Bring to a boil.
Stir tofu, tomatoes, yellow pepper, mushrooms, and finely chopped green onions into the skillet. Cover, and cook 5 minutes, stirring occasionally. Mix in basil and bok choy. Season with salt and remaining soy sauce. Continue cooking 5 minutes, or until vegetables are tender but crisp. Garnish with remaining green onion.

Thanks all! These sound awesome! I love Thai food, but I have never cooked it. My daughter recently discovered it so I thought it would be nice to have a recipe to cook at home. I try to gather recipes for the family favorites so that we don't have to go out to eat often. Thanks again!0
