So, just like last year, I'm gonna go Vegetarian during the Lent season.

Wanna help me make a grocery list?

    It's so easy! A can of tomatoes, a can of red kidney beans, some chili powder to taste and a bit of brown sugar. That's my basic chili.

    I feel like if I were vegetarian I would carb-load all the time! I would definitely get cous cous, whole wheat spaghetti, and brown rice. I just bought some Morningstar Farms "sausage" that I can heat up for breakfast, and it was pretty tasty. You should definitely look into their "meat" line! You could also make your own soups. There is a vegan website that I used to get recipes off of (I am not vegan though but her food was great). It's veganyumyum.com. It has some good stuff, and I'm sure there are links on her page to other vegetarian recipe sites.

    Yeah, I loved being Vegetarian. I actually missed it. It's hard not to carb it up all the time, it definately takes some practice.

  • Morning Star also makes some crumbles that you can use in place of ground beef. I use it in tacos, chili mac, and chili. My family only knows when I use it when I eat the meal....I try to be vegan....It is also found with the breakfast sausage mentioned earlier.

    Grains (rice, barley, quinoa, amaranth, teff, chia...ect)
    Soy (edamame, tofu, seitan, miso, tempeh)
    Fruits/Veg
    Fats (oils, nut butters, nuts, avacado)
    Dairy-greek yogurt (much higher in protein than regular), either reg milk or soy/almond/rice milk
    B-Vitamin complex (remember that B12 only comes meat)

    Hope this helps, also feel free to look at my food diary. (It hasn't varied much in the past month-not living at my own house due to issues beyond my control).

  • I don't like to do much soy, but tofu hot dogs are a quickie meal for me when time is short. Dress them up with veggie chilli!

    Try preparing your beans from scratch instead of buying them canned. It will bring the sodium way down, and it will be clean eating!

    Most beans need a good soak before the are cooked, but a quick soak works too: boil dry beans for about 2 minutes and let stand for one hour. Peas and lentils don't even need a pre-soak and are quick to prepare.

    You could prepare a three-bean salad to always have on hand, it is so tasty. Another muncher is a homemade baba ganoush (eggplant dip) or hummus (chickpea), easy to prepare but you will need to buy tahini (sesame seed paste) and have a blender.

    There is nothing easier and more tasty than a pumpkin soup. I use a crock pot which makes it super-duper easy. You will need a half pumpkin, a few sweet potatoes, an onion and cinnamon and nutmeg. Garnish with cream if you are feeling feisty!

    A tend to prepare an eggplant (the big one, not the little aubergine) for a fill-me-up meal. And, make beans your new staple food.
