    I have the Almond Milk that doesn't have to be refrigerated till opened. Can this be used with the pudding(It seems someone said no for a different recipe)? I love the whole concept of this dessert.

    I'm totally going to make this for a halloween party I'm going to....would the amount make fit okay in a pie crust, or should I double it?

    I would double it, use the whole pudding packet and 1 cup of each milk and pumpkin. You could even adjust for consistency. Play with it!

    That would work perfect! It is true that almond milk doesn't make the best pudding when plain, it doesn't froth up and react to the pudding as well, but I just use less milk so it's still thick.

    HOWEVER, the pumpkin in this recipe adds so much thick creaminess that using almond milk does not make it worse in any way.

    For those of you saying you love pumpkin, I make a pumpkin smoothie pretty often too:

    1 cup almond milk
    1 banana
    1/2 cup pumpkin
    pumpkin spice and sweetener to taste
    ice

    It's really good, and even a bit better if you use real milk, but that adds calories.

    Sometimes I even skip the banana and use real milk instead of almond. It actually ends up cutting calories, it just doesn't have the yumminess that the banana adds, but its still delicious.
