Delicious pineapple soy chicken! (crock pot)

I saw it on Pinterest... I tried it... and I fell in love with it.
2 lbs boneless skinless chicken breast, cut into medium sized chunks
1/3 c. light soy sauce
1/2 c. packed brown sugar
1 c. pineapple juice
1/2 tsp. crushed red pepper or red pepper flakes
Throw it all in the crock pot and cook on low 6 hrs or high for 3. (I started it out on high then switch to low and ate it in about 5 hrs) When it's all done, depending on how much meat you used, there will be extra juice in the crock pot... bottle that stuff up and use it again!!!
You would think with the juice and sugar it would be high in calories and bad for you... but when I plugged my whole dinner in which included steamed rice and vegetables, the whole meal came in under 350 calories!
It is sweet and tangy and so tender it falls apart when you stick a fork in it. I highly recommend.

I am going to try this with leftover chicken and simmer it for about an hour. This sounds so awesome!0 -

I've done the same thing with a pork tenderloin and got rave reviews from my picky men!! Served it with some cilantro lime rice, and we had no leftovers!0

I'll have to try this. I eat a lot of chicken & use low sodium soy sauce. I have to watch my sodium per my heart dr. Almost impossible0
