Plantains Foster -- for breakfast or dessert!!

ripe plantain (for those that don't leave the basic fruit/veggie box you could use a ripe banana)
cooking spray
Oriental Five Spices (cinnamon, ginger, cloves, nutmeg, anise)
packet of dark, light, white, or fake sugar (could also drizzle agave, honey, or the likes)
cup of non-fat greek yogurt

heat toaster oven (or big oven) to 425* line cookie sheet with foil. Spray with cooking oil. cut plantain on the diagonal (1/4 to 1/2 inch thick), sprinkle spices and sugar packet over plantains. cook for 10 minutes, flip cook 5-7 minutes more. Pour over greek yogurt and enjoy!

Basic plantain is about 200 calories
Basic non-fat plain greek yogurt is 100 calories

    You can also sprinkle the sugar/spices on and then hit it with a creme brulee torch. Just keep the torch moving and carmelize the sugar so you get a crispy shell.
