Meals for one?

Hey folks!


Any decent and reasonably cheap meals tailored for us poor souls who live alone? I'm quite new to living by myself and I am struggling for ideas. I like to experiment with food, and will eat pretty much anything, so give me all you got!

    I use Pillsbury Cooking for Two recipes quite a bit, being careful with the biscuits (I usually modify every recipe I use anyway, regardless)

    Also, check out Allrecipes . com, you can tailor those for more or less.

    Leftovers can be frozen, of course (except potatoes don't freeze real well)

    Salad's are easy and can be fun if you don't load them with too much stuff. I especially like herb salad and spinach salads, Soup is easy and you can freeze what you don't eat and have the rest later. I admit to having become the master of dividing stuff and spreading it over the week.

    I've lived alone for a while now. George Foreman's small grill can be your very best friend. I've found that grilling a piece of protein, and throwing some veggies on the plate is the healthiest, and not too expensive way to eat. Definitely better than canned soup and frozen meals!

    You can also cook in family size recipes, and freeze the leftovers but I'm not as fond of that. Some folks love it though.

    Chicken breasts are great because you don't really have to divide them up, making it easy to make a meal for one.
    Sweet potatoes (smallish ones) work great this way too. 1 potato for one person.

    I used to cook a full recipe and then freeze the leftovers in single serving sizes for later. Also you can find fish fillets individually frozen and just cook what you will eat. You can also cut regular recipes in half or quarters in a lot of cases.

    check out the hungry girl books. there are alot of meals that serve one person.

    What I do is that I cook for two and freeze half of it for days when I don't have time or don't feel like cooking.
