I've been doing low carb for a few years and have found these resources below really useful. I have a few recipes of my own but most of my dinners just include a lean protein that is usually grilled, baked or broiled... along with veggies or a salad. I know it sounds boring but you can definitely put many spins on them and use non sugar based spices and sauces to make them taste great.
Keep plenty of healthy low carb snacks around (string cheese, hard boiled eggs, sugar free jello or sugar free popsicles for the occasional sweet craving, etc...)

What works if for you to increase your dietary fats and protein...
My days looks alot like this:
Breakfast - bacon eggs, avocado, with salsa
Lunch Salad with some sort of meat...lettuce wraps with tuna, etc.
Dinner Fish, meat, turkey, chicken...sweet potato, green veggie like swiss chard....
for more interesting ideas (LOL!) Google some of the Paleo/Primal blogs, lots of good stuff there! One of my favorite is : Paleomg.com
**Try to stay away from the processed bars, canned stuff, etc. You need real food!**
Good Luck!0 -
Philly Cheesesteak Stuffed Green Peppers
Slice green peppers in half. Line with provolone cheese, stuff with sauteed onions and mushrooms, and roastbeef or chicken. Top with a slice of provolone and bake. Serve with sliced tomatoes.0 -

Last night I was craving a big bowl of chicken noodle soup. 4oz of chicken meat, 1 cup of chicken broth, 1 cup spinach (chopped), 1/2 cup chopped leeks, 3oz of miracle noodles, yummmm. (7 carbs)
Bacon wrapped sea scallops are a treat.
pulled pork
Spread turkey slices with cream cheese, roll up and eat. be wild and put a cucumber or pickle spear in the middle
Pop a chicken in the crock pot. When its done de-bone it. weigh out your portions and store in the fridge, easy peasy grab. And don't forget to save the broth!
I keep tuna cups in my drawer at work for an emergency snack, and pepperoni sticks in my car.
Grilled sausage served over greens.
