Overnight Oatmeal - Fiasco or Just Fine?
So, I tried the overnight oatmeal recipe last night using pumpkin as my flavor. this morning, I expected it to maybe double in size in the container? Or at least thicken? It was the same soupy consistency as when I put it in the frig last night. Is this right? Having never done it before, I really didn't know what to expect, but hoped for it to be a lot thicker than it was. I ate ti cuz I'm not going to waste food, but what is yours like???

You may just want to microwave it for a couple of minutes...Forget the overnight refrigerator...0

I love overnight oatmeal. I admit I did expect it to thicken up overnight the first time I made it but I just make sure I don't put too much liquid in and then I slice a banana in when I'm ready to eat it - yum.

Overnight Oatmeal--- FANTASTIC!!! I use the steel cut oats and 'double boiler' style crock pot method. I found this on Pinterest. it is super easy and clean up is a snap. It says do 6hr on low, but it took about 8? I think 4-5 hr on high would work too.
My advice, do it when you can watch it the first time, then do over night. I have an oval shape large crock, put about an inch of water in bottom, then sit your dish in it ( used an old corning ware square 2qt cass, who doesn't have one of those?). When done, add brown sugar spenda and a bit of skim milk, divide up into small containers and you are ready for the week.0 -

1/4 greek yogurt
1/4 steel cut oats
1/3 cup skim milk
1 Tablespoon chia seeds
1/3 cup diced fruit of your choice (black cherries are the best!)
Mix and allow to sit atleast overnight. (I usally make five or six at a time and they're still just as good a few days later. I do like my oatmeal chewier, though).
This has been the perfect mixture so far. It's always nice and creamy, never soupy. Yum!0 -
I eat this every day and LOVE IT. Here is my recipe
1/2 cup oats
1/2 banana or fruit of choice I like a few raisins also
sweetener of choice I use stevia(2 Tablespoons of Stevia in the bulk bag from Aldi).
1/2 teaspoon cinnamon(or more)
1/2 cup Unsweetened Almond Milk or Milk your choice
Put in (I use coffee cup) 1/2 of your oats the fruit then rest of your oats. In shaker put Almond Milk, cinnamon, and sweetener shake well pour over oats. I use the blade of a knife to move oats around a little to make sure liquid is all the way through. Cover put in fridge over night. I like mine warm so 1 1/2 minutes in microwave. Delicious...0 -

1/2 cup greek yogurt
1/2 frozen blueberries
1/2 rolled oats or oat bran
1 tbsp maple syrup
Always thick in the morning. Maybe you used too much liquids?0 -

The recipe I use calls for a tsp of chia seeds, which helps it to thicken up nicely. Without the chia it is a little runny, but still tasty!0

Did you use Greek yogurt? I have found this makes a difference. Also, Chiobani thickens up, Trader Joes does NOT. Apparently the quality of the Greek Yogurt matters also. I have made this pumpkin one three times now, and ran out of Chobani and so have a Trader Joes version that has been "cooking" for the past two nights. It is slightly thicker, but Chobani will thicken up in a couple of hours, not DAYS.0

Mine is just fine but I use kefir instead of milk and I make sure to put the oats first than kefir and than banana and berries and mint leafs. Than I cover it and put it in the fridge.0

Ingredients
•1/4 cup uncooked old fashioned rolled oats
•1/3 cup skim milk
•1/4 cup low-fat Greek yogurt
•1-1/2 teaspoons dried chia seeds
•½ teaspoon pumpkin pie spice
•2 teaspoons maple syrup (or substitute any preferred sweetener)
•¼ cup pumpkin puree (unsweetened canned pumpkin)
Directions
In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, pumpkin pie spice, and maple syrup. Put lid on jar and shake until well combined. Remove lid, add pumpkin and stir until mixed throughout. Return lid to jar and refrigerate overnight or up to 3 days. Eat chilled.
Nutritional Info: 216 calories, 4g fat, 48g carbs, 8g fiber, 12g protein; Weight Watchers PtsPlus: 70 -

For the record, we were out of yogurt last weekend (I forgot that I used it all to make salad dressing earlier in the week), so I tried making the refrigerator oatmeal without it. Even without the yogurt, the chia seeds thickened it up nicely. So, if you want it thicker, toss in a tablespoon of chia seeds (and get the extra nutritional boost, as well).0

I did use chia seeds, they expanded a bit, but not to the thickness I expected
I followed the recipes to the "T" but think maybe I had overly thick expectations:laugh:
It was still good, and will do them again, I just may reduce the liquids a bit0
