We're leaving on vacation tomorrow so tonight I tried to use up everything that would spoil. I made a salad with mixed spring greens, baby spinach, feta cheese, leftover new york steak strips, walnuts, chopped tomatoes, a minced garlic clove and a chopped apple. Dressed it with oil, vinegar and S&P. It was SO GOOD. The apple made it!

    Two of my favorites:

Salad mix, craisins, sliced almonds tossed with Girard's Light Champagne Dressing

Romaine, grilled chicken, 1 tbsp shredded romano/parmesan cheese, fat free caesar croutons tossed with Girard's Light Caesar dressing.

    Hope that helps a bit.

    ooo I love salad.

I mainly will start with a spinach/lettuce/green base and change out toppings. I love putting hard-boiled egg, avocado, carrot, celery, onion, bell peppers, salt n pepper etc on it with maybe a LITTLE bacon... I also LOVE LOVE LOVE strawberry poppyseed salad with the nice dressing - google it! There are so many options. My salad dressings are always homemade - oil, vinegar, mustard, a little syrup, lemon, seasonings etc.

Careful because toppings and dressings can ruin a salad calorie wise.

Check out "Peas and Thank You" it's a website with awesome salad recipes. I am in love with her roasted chickpea salad with the cinnamon dijon dressing - absolutely my favourite dressing and salad.

    Have fun!

I just have a spring mix lettuce with baked chicken tenders or cod ( no breading...just baked plain) on it. I use mustard, apple cider vinegar with stevia for my dressing. You can also use spicy mustard. It's very low in calories and I am a clean eater also. You can add othe veggies or avocado to it too.

Mine are pretty much consistent. I really only have 2 that I make

They both have ground turkey, cheddar cheese and lettuce. (1 serving of turkey, one serving of cheese)

    This is where it changes:
    Taco type salad:

    - 1 resers baja tortilla ( 1 tortilla is 110 cal - the lowest flour tortilla I've found) I slice it in a few pieces and put just a tad of oil on it then bake until it's crispy then let cool. crinkle on salad like tortilla chips
    - add sour cream and lite catalina dressing
Add other veggies as you like and if calories allow, add taco seasoning

    bbq turkey salad
    - mix light ranch dressing and bbq sauce (usually 1 serving of each, sometimes half a serving depending on my calorie plan of the day) - makes a nice bbq ranchy type dressing
    - add 1 serving frenchs fried onions if calories allow

Those are my two main salads....I mostly use ground turkey but sometimes it's baked chicken breasts. Either way, both are yummy. My husband will eat them too

I like a good black bean salad with diced onions, tomatoes & bell peppers with a salsa topping.
Greens with pretty much 1/2 the produce veggie dept.
I like cucumbers with a rice wine vinegar.
Spinach with boiled eggs, slice strawberries, and water chestnuts and a vinaigrette is good

Diced roma, zucchini, cubed roasted chicken breast with light greens are good.

Don't hesitate to add beans, crumbled cheeses and vinegarette dressings. If you want more inspiration, hit up a gourmet salad bar.

I have salad everyday, (M-F) for supper. I am really in to Romaine Lettuce right now and have been using that for about a month. I just add chopped veggies I like (broccoli, cauliflower, radishes, bell peppers, pea pods) a tsp of chia seeds & an ounce of cheese (whatever I have on hand) cubed, and balsamic vinagrette.

1 head of romaine, 1 red and 1 green bell pepper, 1 onion (I used white), 1 cup feta cheese, 1 - 6 oz can sliced black olives, and a vinaigrette.

I'm pretty boring with my salads but I love them anyway! I have the same one pretty much every day for lunch -_-

Little gem lettuce, rocket, and sometimes spinach, with oven roasted (I don't use any oil) carrots and beetroot, cucumber slices, radishes, and some olives we have any (: If i'm not at uni over lunch time (I always take the salad with me) i'll cook some mushrooms and tofu cubes too (:
