I was just given this amazingly yummy muffin base recipe (90 Cal per muffin)... You pretty much add whatever you feel like into the mix. I used 150 grams of frozen raspberries, which made the muffins 95 Cal each. The person who gave me the recipe added 2 bananas, and 100 grams choc chips which made the muffins 125 Cal each.
Anyway, the recipe base.
50 grams melted butter
1.5 cups Self Raising Flour
1 cup skim or nonfat milk
1/2 cup sugar
1 egg
Mix all ingredients together in a bowl. Add in your fruit / flavour of choice - I used 150 grams of frozen raspberries.
Divide into muffin tray. Bake at 160 degrees CELCIUS or 320 degrees FARENHEIT for 15 minutes or until golden.
Make 16 muffins.

Try unsweetened applesauce instead of the butter. Good substitute for eggs too.0 -
Ooooh thank you for that tip! I will try that when I make them next.0

I tried making the muffins lastnight with apple sauce instead of butter. They turned out quite well, although it only made 6 small muffins.0
