Fish~ Any ideas?

We are having sunfish for Supper. We caught them ourselves and my guy is getting hungry for them. We usually bread tham and manfry them. One bag of fish still has the bones and one bag has the bones removed, but the filleting has left he flesh pieces quite thin. Does anyone have any healthier suggestions than breading & panfrying?

I'd grill it and mix it in with beans and rice, spices, herbs etc yummy0 -
Breading and pan frying is very good (we usually use flour as breading with a little salt/pepper - or whatever spice you want.) I have also seen where people wrap the fish up in parchment paper and bake. You could put lemons in with the fish for flavor, haven't tried it yet, but looks delicious.0

I'm not famliar with that fish, but rainbow trout, white fish or talapia, cod or halibut all work great for me, with a thin coating of corn flake crumbs or ww bread crumbs that is mixed with seasoning then baked. I also like to coat my fish with dijon mustard before putting a few crumbs on it.0

Here is one way I have always like cooking fresh water fish.
Get a piece of aluminum foil and place the fish on the aluminum foil. Put some butter and lemon juice and herbs/spices on the fish. Put some brocolli around the fish. Wrap it up and put it in the oven. Serve with some rice for a wonderful meal.0 -
Get a large piece of parchment paper, and put the fillet in the middle. Put lemon or lime slices on top with some pepper, wrap it all up, and broil or grill it in the packaget about 5 minutes, longer for a thicker fillet. You can also add some raw, shredded kale to the package for some green. Last month's issue of Everyday Food had some really good fish recipes if you're interested.0

Put in a baking dish, spray with PAM, pour in a little white wine, just 1t of butter, salt and pepper and bake...done when flaky. YUMMY0

what about somehting simple, under the broiler for 8-10 mins with some coarse salt and a sprinkle of dill?0

cut up some garlic, slice some onions and other vegetables very thin. Put it in aluminum foil along w/ a little olive oil, salt, pepper and the fish, close it up tight and put it on the grill for about 15 minutes - YUM YUM0

It is very good! I also do this trick with vegetables from my garden during the summer months. I think garlic tastes good with everything!0

my favorite with fish - wrap it in foil (spray the foil so it doesnt stick) and "bread" the fish with garlic and white cooking wine - warp it and cook it - healthy, not dry and yummy!0

My husband made a creole tonight but substituted the shrimp with Talapia and scallops. It was wonderful!0

My hubby likes to put a rub of cajin blackening seasoning mixed equally w/taco seasoning on the fish.
Spray a frying pan w/pam and melt 1 tsp margarine. Put heat on high and "blacken" it.
It is wonderful served with corn, black beans and home make pico di gaio. (can you tell I failed Spanish?)
They serve something similar at "Logans" but his take is much friendlier to the waist and tastes better.0 -
Try coating the fish with crushed cashews and herbs. Also, I have tried chicken coated with cheddar French fried onions crushed. It was very good! I baked the chicken and it looked just like fried chicken tenders. If you are watching sugars and carbs, crush pork rinds and use this instead of french's onions. Then, use extra pork rinds, spray with butter flavored cooking spray and sprinklw with cinnamon and splenda or other no cal no sugar sweetener. Yum, makes you think you are eating cinnamon twist from Taco Hell (yes I said hell...great deterent to stay away!)0

this is exactly what I do.....there is nothing better than fish steamed in the oven wrapped in parchment paper.....with some pepper and i usually throw in a few slices of red onion.....soooo good i could live off fish0 -

take 1 Salmon or Trout fillet (or any fish really)
Sprinkle with finely chopped Chilli and finely chopped ginger, ad a splash of soy sauce
Add more chilli than you like as the steam seems to reduce the intensity of the chilli.
Squeeze half a lime on the fish, slice the other half and lay on top
Steam untill cooked.

We had fish tonight too.. Red Snapper, very thin filets from fish we caught this summer. I scrambled an egg with a very small amount of milk and salt & pepper. Then I dipped the fish in the egg mixture and rolled them in Pinka bread crumbs. They are very low calorie. I heated an iron skillet in the oven at 450 degrees with just a couple of tbs spoons of olive oil. (tip...if your skillet is seasoned well, heat it first and then add the olive oil to the hot skillet.) When the pan and oil was hot, I put in the fish. It will brown in the skillet in the oven. Turn it once when the bottom gets brown and cook a bit longer. It was Wonderful !!!
I steamed some broccoli, mushrooms and snap peas as the side. My entire family loved it. They didn't even realize how low calorie the whole meal was. (-:0 -
Check out the other posts on Recipes, eg: Talapia, also chicken recipes. As long as your fish is the milder tasting variety any of the spice combination and cooking methods mentioned could be used....... Endless variations for tasty meals....

I love my fish mediterranean style. Saute a couple of cloves of garlic in a Tbsp of olive oil, add one can of diced or petite diced tomatoes, throw in a few sliced or chopped olives, and some capers. Let the sauce cook down for about 5 minutes to thicken, then add the fish, cover, and turn heat to low. A thin fillet should cook up in just a few minutes. Serve with some of the sauce spooned on top and season with fresh ground black pepper.0
