So I want to make tilapia tonight and was wondering if anyone had any good/low cal tilapia meal ideas?

    I want to know how you lost 20 lbs? I just can't get motivated to stick with any worth while plans. Not to mention I have kids and seem to get sick almost every week they bring home stuff that I can't stick with a plan. This time I was surviving on chicken soup for 2 days of not feeling well.

    Thanks for the support. The bad thing for me is I know what to do and have lost weight after having the kids but now as I get older I get so tired and kind of freeze up everyday from just being tired. I have turned to one cup of coffee to start the day and usually work out every day with something but lately I just am so tired and overwhelmed. I think I need a vacation once the kids get out of school. I need to stick with a better eating schedule too. Back to healthy salads and fruits and not allowing the kids too much of the snack foods around. Thanks so much. I hope to help others like you with my success story if I can get there...Thinking about ordering the P90X program but it is so expensive and I have all this equpment around my house already. I think my new strategy is to eat better and start biking again.

    I make little tin foil packets, thinly sliced potatoes, tilapia fillet, lemon and fresh dill, (if u like lemon, then put a slice of it and squeeze another over top, otherwise just squeeze a little on the fish. and more to taste afterwards..don't want the taters to taste lemony :wink: ) seal it and bake, instant dinner in a packet with NO dishes :laugh:

    i'm making parmesan crusted tilapia tomorrow!!!

    1/4 cup fat free miracle whip
    1 tbsp. i can't believe it's not butter light
    1/4 cup parmesan cheese

    slather all over tilapia and bake in oven!

  • I really like Gorton's new Grilled Tilapia in the signature grilled flavor. I have been putting salsa verde on it. Pretty darn tasty & Im not a fish person.

    LEMON GARLIC TILAPIA

    Ingredients

    * 4 tilapia fillets
    * 3 tablespoons fresh lemon juice
    * 1 tablespoon butter, melted (I drizzle with olive oil instead of using butter)
    * 1 clove garlic, finely chopped
    * 1 teaspoon dried parsley flakes
    * pepper to taste

    Directions

    1. Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
    2. Rinse tilapia fillets under cool water, and pat dry with paper towels.
    3. Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
    4. Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

    BAKED TILAPIA WITH MANGO SALSA

    Ingredients

    * 1/3 cup extra-virgin olive oil
    * 1 tablespoon lemon juice
    * 1 tablespoon minced fresh parsley
    * 1 clove garlic, minced
    * 1 teaspoon dried basil
    * 1 teaspoon ground black pepper
    * 1/2 teaspoon salt
    * 2 (6 ounce) tilapia fillets
    *
    * 1 large ripe mango, peeled, pitted and diced
    * 1/2 red bell pepper, diced
    * 2 tablespoons minced red onion
    * 1 tablespoon chopped fresh cilantro
    * 1 jalapeno pepper, seeded and minced
    * 2 tablespoons lime juice
    * 1 tablespoon lemon juice
    * salt and pepper to taste

    Directions

    1. Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
    2. Prepare the mango salsa by combining the mango, red bell pepper, red onion, cilantro, and jalapeno pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate until ready to serve.
    3. Preheat an outdoor grill for medium-high heat, and lightly oil grate.
    4. Remove the tilapia from the marinade, and shake off excess. Discard the remaining marinade. Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets. Serve the tilapia topped with mango salsa.

    I like to cook it in a pan til it will flake apart, then add chili powder, cumin, red pepper flakes, diced green chiles...get it nice and spicy, then I pair it with some mexican rice, some homemade coleslaw, wrap it in a tortilla and top with tomatillo sauce...MMMMM! Could eat that for days! I save it for a day when I have lots of cals left over, cause by the time you put rice, coleslaw and tortillas into the mix, you're running about 400 cals for each taco...but sooooooo gooood!!!

    Also try heating a tablespoon of your favorite oil (I use olive) just til it shimmers, swirl it around the pan and drop your fillets in. Sprinkle with either Mrs. Dash Original or Lemon Pepper and Dill, let cook about 4 minutes, flip over, sprinkle with garlic powder, cook another 3-4 minutes or til it flakes easily with a fork. Tastes good with anything--potatoes, brussels sprouts, brown rice...if I have extra calories that day I'll also sprinkle some shredded parmesan on it and cover it for the last two minutes of cook time, so the cheese melts.

    Tilapia is versatile stuff. And the taco method of preparing it is awesome as a taco salad with a little lite sour cream instead of dressing....damn, it's only 8:30 in the morning and I'm ready for dinner...and I've got some tilapia in the freezer at home...mmm!
