    I make this all of the time for a snack! I have found the almond milk really doesn't mix well with the sugar free pudding mix. So I use 0% greek yogurt instead. And I use more yogurt and less sugar free mix...truly you only need like 1/6 of the packet, it is flavorful enough.

    Oh... I'm a pumpkin addict I have got to try this one!!

    Here's a great one.. I made pumpkin butter from skinnytaste.com & I've taken to mixing it in with my vanilla protein smoothies and it's to DIE for!! I love it!!

    It's not as sweet as some pumpkin butter so if you think about it, add in some Splenda or Truvia for your extra sweet needs.

    You're right, almond milk doesn't mix very well with pudding, I've found that using less of it works just fine though. However, the pumpkin puree adds the volume, thickness, and creaminess that pudding requires. The almond milk just allows for less calories than anything else.

    To anyone who's tried it yet, let me know how you liked it! I had a double batch last night and was ecstatic about it!

    I just made this tonight and it was delicious!!! Love it! And the almond milk worked just fine! Thanks for the recipe! Tomorrow I will crumble some ginger snaps on top (ran out of calories tonight...lol).
