I just wanted to share this recipe that I discovered last night. It's probably been on here before at some point, in fact it's probably quite a common thing to do, but I was very excited when I figured it out - cherry tomatoes roasted in a bit of balsamic vinegar! It's not very calorific (I had 200g tomatoes, one tablespoon of balsamic vinegar, and less than a 1/4 cup of basil = 45 calories) and it was so tasty and really livened up the meal. Like I said, this has probably been done before but if you've never tried it, do, it's gorgeous!
Does anyone know of any more tomato recipes? I eat a lot of tomatoes and am looking for some different ideas.

Take your roasted tomatoes and blend them into some neufchatel cheese. Good spread on toast or on some multigrain crackers as a snack.0
