Good cold salads (like bean salad)?

Does anyone have any good cold salads recipes, you know like the ones you make and put in the fridge and can have anytime (up to a week)? Like a bean salad, but something else.

    I make one with quinoi, I got it off of all recipe.com........I also just like playing with the things I have in the fridge. Google texas caviar, it is one of my favorites and so good for you! I will add more if I can think of one off hand.

    Broccoli Salad

    Raw broccoli - stems trimmed and then florets broken into bite size pieces.
    Sliced mushrooms.
    Diced purple onion.
    (And, I also put diced bacon in mine)
    Toss all with 1/4 cup Newman's Own Light Italian Dressing.
    Chill for an hour before eating.

    Keeps for 2-3 days in frig.

    black beans, diced cucumbers, onions and tomatoes...toss with whatever dressing, I usually use balsamic vinegrette...I love it..

    Three Bean Salad :love:

    Green beans, 1 can, drained, rinsed
    Kidney beans, 1 can, drained, rinsed
    Garbanzo beans, 1 can, drained, rinsed
    3 T Red onion, minced
    2 cloves Garlic, minced
    1 Tablespoon olive oil
    1 Tablespoon red wine vinegar
    1 Tablespoon sugar
    2 Tablespoons chopped Italian parsley
