I altered a recipe to make it low cal and it came out fantastic!!

1 box yellow cake mix
1 small box sugar&fat free instant vanilla pudding mix
1 - 8oz fat free whipped topping
1- 20oz can crushed pineapple - no sugar added
maraschino cherries (optional)
walnut pieces (optional)

I made the cake using 2 eggs, 1 tbl of oil and 1/4 cup applesauce. Baked in a greased 9x13 pan for however long the box says to bake. As soon as it comes out of oven, while it is still hot, poke holes in cake with fork. Pour can of crushed pineapples with juice over cake. Let cool completely. In separate bowl, mix pudding mix with 1 cup of milk. Fold in container of whipped topping. Spread on top of cake. Makes 15 servings if using 9x13 dish.
