Pumpkin seed recipes anyone?

I want to make some roasted pumpkin seeds. Does anyone have a good recipe (spices to use) ? I've never had them.

    Old school a little butter and more salt than you should; just made a batch last night.

    Preheat oven to 250 degrees F. Pick through seeds and remove as much of the stringy fibers as possible. Bring a pot of water and salt to a boil. Add the seeds and boil for 10 minutes. Drain, spread on kitchen towel or paper towel and pat dry. Place the seeds in a bowl and toss with oil or melted butter. Spread evenly on a large cookie sheet or roasting pan. Place pan in a preheated oven and roast the seeds for 30 to 40 minutes. Stir about every 10 minutes, until crisp and golden brown. Cool the seeds, then shell and eat or pack into an air tight container or zip closure bags and refrigerate until ready to eat.

    If you want some spicy seasonings, toss in some cumin, salt, pepper and paprika with the oil or butter before roasting. You can also use Pam spray if you don't want the oil or butter.
  • I just made these last night! Bake for 30 mins on 300. Then add a bit of olive oil and some cinnamon sugar. Toss and bake for 5 more mins! Yum!
  • I soak mine in water, EVO, and Morton's Nature's Seasons for an hour or so then bake until golden brown. I've also added a generic creole mix a time or two for a more spicier outcome. We all love them!
