Re-made Chicken Parmigiana
What you will need:
10oz boneless skinless chicken breast, pounded thin (about 1/4 inch)
1 Cup Pasta Sauce of your choosing
1 tbsp. minced garlic (not fresh, jar is fine)
1tsp. each of rosemary, basil, parsely, thyme, oregano (or you can just use a pre-made italian seasoning blend)
1/2 Cup part-skim mozzarella cheese
1. Spread 1/2 cup of pasta sauce in the bottom of small baking dish, place chicken breast on top. Then, spread minced garlic evenly on top of chicken breast, followed by the herb blend. Gingerly spoon the rest of the pasta sauce on the top of the chicken.
2. Cover with foil and bake at 375 degrees for 35 minutes. Take out, uncover, spread 1/2 cup of cheese over the top of the breast evenly. Place back in oven uncovered for 10 minutes.
Yield 2 servings
278 calories per serving.
If you would like to serve it over pasta, you can simply spoon the leftover sauce over the pasta!
