These are great for when you just want to munch on a gigantic plate of chips. Trust me, this recipe will make a lot, and the best part is it's a single-serving. Hope you guys enjoy these as much as I do!
Ingredients:
1 medium-sized zucchini
1/8 cup of all-purpose flour (whole-wheat flour would be much healthier, but I've never tried using it)
1 egg white
1 1/2 tbsp. of yellow cornmeal
1 tsp. of seasoned salt
1 tsp. of onion powder
1/2 tsp. of ground black pepper
Pam spray
Directions:
Preheat the oven to 350 degrees. Thinly slice the zucchini into coins. Now, combine the flour, cornmeal, seasoned salt, pepper, and onion powder in a bowl. In a separate bowl, beat an egg white. Next, make an assembly line of zucchini, egg white, and the flour mixture. Bread the zucchini chips and spray a cookie sheet tray with PAM. Put the chips in a single layer and pop into the oven. These need to cook for about 15-20 minutes. There's no need to turn them. They'll be crispy on both sides once they're done.
Optional Ranch Dip Recipe (Who really has chips without dip?)
Ingredients:
2 tbsp. of light sour cream
1 tsp. of seasoned salt
1/2 tsp. of ground black pepper
1 tsp. of onion powder
1 tsp. of parsley flakes
Combine all of these ingredients in a bowl and enjoy!
