Banana Applesauce Muffins

The original recipe is at http://recipes.sparkpeople.com/recipe-detail.asp?recipe=250050 and has the muffins at 107 calories each...so I was intrigued.



BUT...the ingredients I used were slightly different so here is what I made and I will let you know how they taste...in the oven now!

Same recipe, with these ingredients. I also didn't soak the oats in the milk for too long...maybe 20 minutes.

Directions

Soak Oats in Milk for 1 hour.

Add Banana, Applesauce, Vanilla Extract, & egg whites, mix well.

In seperate bowl, blend Whole Wheat Flour,
Baking Powder, Baking Soda, Salt, and Ground Cinnamon. Add to wet ingredients, stir until just mixed (should be lumpy).

Pour in to 12 muffin cups, either lined or sprayed with cooking spray.

Back at 400 degrees for 20-25 minutes, until set.

Refrigerate any leftovers after 24 hours.

Make 12 single muffin servings.

Original Silk Light Soy Milk, 1 cup (remove)
Applesauce, unsweetened, .25 cup (remove)
Vanilla Extract, 1 tsp (remove)
Egg white, 2 serving (remove)
*Whole Wheat Flour, 1 cup (remove)
Baking Powder, 1 tsp (remove)
Baking Soda, .5 tsp (remove)
Salt, .5 tsp (remove)
Cinnamon, ground, 1 tsp (remove)
Banana, fresh, 2 small (6" to 6-7/8" long) (remove)

  • Alright...verdict. These don't add sugar so they're not a sweet muffin. My solution this evening: insert one square (1/12th bar) of dark chocolate into middle of hot muffin and let it melt. BAM-dark chocolate banana applesauce muffin :-) 106 calories total on my count, you can look at my food diary to see the scoop if interested. Had them for "late night" tonight, Sunday Feb. 28th. I'm sure they'd be great with a little butter or maybe some peanut butter...or dark chocolate peanut butter hehe. Or whatever you like. Maybe you like the taste of oaty, banana health. I need the sugar kick in a muffin and the dark chocolate was the perfect fix for me. Whoo!
