Meals for one?

Hello all,
I've recently fallen off the bandwagon but I am determine to lose the weight that I've gained and develop some healthy habits.
I currently live alone so I'm always tempted to grab some take out instead of cooking. It just seems like so much work when I'm cooking only for myself! I'd love any ideas you guys have of delicious, healthy meals for one that will keep me from getting bored and turning to fast food. I love southern, comfort food and my crock pot is my friend.
Any ideas are appreciated!

Whatever you decide to eat, make larger amounts of it and store in serving sized containers so you can just grab a couple of things and have a meal ready for you.

I make chili, stew in the crock pot freeze in single servings, and have them for lunch. There are some great low fat high protean chili's out there.
For dinner I build off a single piece of lean protean (fish, chicken, pork loin) and add greens or vegges to it. Avoid starches and non-whole grains.0 -
We've talked about this before, but pre-cooking a bunch of meat (I find chicken and pork easiest/healthiest) and then adding one handful of it along with two handfuls of your favorite veggies in a ziplock steamer bag makes for the easiest one-person dishes ever. I do frozen veggies because they're easier/cheaper and add a few dashes of seasoning or low-sodium sauce in it.
This way, you can make 1lb of chicken breast into 4 or 5 different tasting meals after only preparing once.

meal plans help me a lot. i cook for two, but my boyfriend doesn't typically eat left overs so i find ways to reuse things a lot.
tonight i am making pasta with shrimp, and broccoli. the left over shrimp and broccoli are being used for a stir fry tomorrow.
the other day i cooked up a bunch of chicken breasts and ate one with veggies for dinner, used another piece to go into a salad, and the last piece was shredded and used in a quesadilla.
it's hard to stick to it because a lot of the time i would love to just go out to eat instead, but financially it doesn't make sense for us.0 -
