Looking For salads/packed Lunch ideas....

Hi all!!

As part of my eating healthy and losing weight I have decide that it would be a good idea if i took salads/packed Lunches with me to work that way i wont end up eating at work and there for wont be eating loads of crap :-).

I would be very happy if other MFP members could add some of there ideas on to here aas i aint too sure what would be suitable and filling.

Also if possible a few inbox ones as i have app on phone and dont always get to check here thanks much appricated.

    lunch salad I made today.

    alfalfa sprouts 50g
    chopped medium tomato
    1/4 chopped avocado
    130g or 1/4 cut oven roasted potatoes
    15g of mixed nuts

    375 cals

    your choice of dressing.

    I have it with wholegrain mustard.

    mixed nuts and avocado are calorie dense so you could drop it down by removing one or the other.

    Im vegetarian, but if you eat meat you could add tuna, or whatever.

  • There is a wonderful (and easy!) crockpot chicken recipe on the recipe forum here that I have made several times specifically for taking to work:

    4 chicken breasts
    bottle of Frank's Red Hot Sauce
    packet of Hidden Valley Ranch dressing mix

    Cook in crockpot until its done (sorry, don't recall the time 7 hrs on low??)

    Pull the chicken apart with a fork so you have a pulled BBQ type thing.

    I pack it in a container and take a high fiber wrap. I'll supplement with some veggies from the company cafeteria salad bar and have a wonderful wrap.

  • Anything with tuna- low carb/sugar and HIGH protein...I notice it feels me up for much longer than a carb-heavy lunch! Starkist has these great individual packs of pre-made tuna salads- very light, no mayo...zesty and delish!!!
    A bit expensive though...You can email the company and beg for coupons! I did and they sent me a bunch!! Happy Lunching!

    I'm 99% vegetarian (I eat fish on rare occasions), so bear that in mind, but here are my recent favorites:

    A spinach or wheat tortilla with hummus, mushrooms, sprouts, shredded carrots, and cilantro, with a side of veggie chips or yogurt.

    Mason jar salad: layer balsalmic viniagrette, then add beans, then mushrooms/carrots (my favorite veggies), then spinach. It keeps for a few days in the fridge like this. Just dump it out into a bowl or tupperware come lunchtime and mix.

    Or good ol' leftovers. I make stir fry a lot and make double so that I can have some for lunch.

    I normally take a box of microwaved frozen veg or fresh veg (green beans, snow peas, broccoli) with a sprinkle of organic mixed bean sprouts for crunch with some protein. Protein in the form of leftover steak or meat, hard boiled eggs, crab sticks, or turkey cold cuts. Might add black sesame beans or smoked paprika powder to vary the taste. I keep garlic salt and low cal dressing in my desk drawer. I also bring fruit--say a banana, a tangerine and an apple for snacking through the day.

    I was happy to discover that there are really air and water tight containers, so I can even throw home made soup into my handbag. The brand I have is called Lock & Lock bought at John Lewis in the UK.

    I take a salad to work everyday for lunch and never get tired of it...here are a few of my ideas that I just love...

    PS. I'm on maintenance and can eat up to 1850 calories a day so I tend to up the amount instead of doing more calorie dense things...you can limit the amount of meat, lettuce and toppings if you see fit.

    Salmon or Chicken Caesar Salad
    1/2 bag of prepared lettuce of your choice (I like Italian Blend)
    4-5 oz of broiled salmon or 4 oz of Chicken Breast, grilled
    Sprinkle of Shredded Parmesan Cheese
    Bolthouse Farms Yogurt Caesar dressing (Pricey, but 45 calories for 2 TBSP and so yummy)

    "Taco" Salad
    5 oz of Extra Lean Ground Turkey, browned with seasoning of your choice (I use chili powder or cajun seasoning) or a 4 oz grilled chicken breast
    1/2 bag of prepared lettuce of your choice (I like Romaine with this one, but I've also used spinach)
    1 roma tomato, sliced
    1/8 cup of black beans (I used rinsed canned)
    1/8 cup of 2% Colby shredded cheese
    4-5 Pickled Jalepenos
    Aldi Fat Free Zesty Italian Dressing (15 calories for 2 tbsp)

    Spring Greens/Berry Salad
    1 cup Mixed Berries (I like raspberries, blueberries, and black berries myself)
    2 Cups of Mixed Spring Greens
    Sprinkling of Pecans (I usually list it as 1/2 serving)
    Kraft Light Balsamic Dressing

    Each Salad, like is with dressing is usually under 400 calories with dressing. A lot of people on here don't believe in using bottled dressing, but I'm kinda lazy and I like it and it didn't effect my weight loss at all.
