Summer is coming and salads are my most favorite lunch meal,

Whats ur favorite additions to a green salad(lettuce cucumber tom ) ???

:flowerforyou: some fresh ideas would be great!

  • lettuce, cucumber, tomatoes, apple and almonds! Very good with some apple vinegar a soy sauce instead of olive oil ! Try it!

    I use apple as well. Have you tryed bean sprouts good with tuna on a salad gives it the little extra crunch. Almonds, peacans, red cabbage, pears or manderine oranges are good to. You can mix and match with different dressings. One of my favorite is spinach, bean sprouts some cucumber with salmon on top with a little maple dressing with a little lemon juice. Yum
  • Last night I had cubed cucumber, red pepper, yellow pepper, tomato, onion and sweetcorn.
    For dressing I used: white wine vinegar, ginger, lime juice, a little sesame oil, some chopped red chilli and a teeeny bit of soya sauce. Nom!!! I'm getting hungry just thinking about it ;)

    One of my most fave is paw paw, strawberries, feta cashews, mint and sweet chilli deressing!
  • Mixed greens, assorted chopped vegies (carrots, celery, cauliflower or broccoli), half an avocado. A tablespoon of sesame seeds, a couple tablespoons of wasabi peas, a small handful of crispy chinese noodles or croutons, and for a dressing, a bit of soysauce, a drop of sesame oil, wine or balsamic vinegar, black pepper, garlic powder, and half a tsp of sugar. The avocado really makes the salad divine, but it's also good without it.

    This is my favorite salad. Very tasty and I often made a huge bowl of it and call it dinner.

    Spinach, strawberries, feta and walnuts. For salad dressing I just splash some balsamic vinagrette on the salad and a pinch of extra virgin olive oil. My sister isn't even on a diet and she begs me to make this salad all the time! When strawberries are out of season I will swap them for apples or oranges.

    If you put some grilled chicken on the salad it makes a quick, healthy dinner.
  • Spinach, mushrooms, shredded carrots, radish, feta and turkey. I don't use any dressing at all.
  • Basic salad begins with : Spring lettuce mix or spinach, broccoli slaw, red onion, cherry tomatoes, red, green, yellow & orange peppers, cheese. I will usually add either hard-boiled eggs, cooked chicken, shrimp or a boca burger and top it off with lite Asian dressing.

    Lately, I've been making the Barefoot Contessa chicken salad and it lasts me the whole work week for lunches. It's chicken (I used a roaster chicken), walnuts, pecans, grapes, mayo (or greek yogurt), sour cream, and fresh tarragon. To cut down on the fat/cals you could just use greek yogurt for both mayo & sour cream. It's so good.

    Kale salad

    1 bunch kale
    1 avocado
    juice of 1 lemon
    2T olive oil


    Rip the stems off the kale and tear into bite sized pieces. Add other 3 ingredients and mash it all together with your hands. Garlic salt to taste--I'd say a teaspoon is a good starting point.
