Topinambur?

So, I have bought about 500 gr of topinambur, after reading very good things about them.
Now that I have them in my fridge, what am I supposed to do with them? Any suggestion or vegetarian recipe? I was thinking about either making some kind of creamy soup, or cook them with rice, but you guys here are far better at cooking than I am, so let me know if you have any suggestion.

UK site but usually spot on - assume you have jerusalem artichokes.

I've done a veggie soup with mixed cereals, beans, peas, a little bit of gingerbread and chopped topinambur (just like potatoes).
It was amazing. Definitely gonna do it again.0
