Looking for quick, easy (and of course healthy) meal ideas

I'm not sure if there is a topic about this already... (please feel free to point me in the right direction if there is)

I was wondering if any of you have favorite meals that aren't too tricky and don't take much time to prepare. I have never really been much of a cook, so ideally something simple. A bonus would be something that my not-on-a-diet boyfriend can enjoy too! :)

Any ideas would be great! I really need to change things up a bit. Thanks in advance!

    i love doing chicken type stir fry's... you can purchase "already cooked" chicken breast & rice... pre-cut fresh veggies & sauce. takes about 10 mintues to prepare & is a breeze to clean up.

    i'm not a good cook at all, but my husband loves this! i use teriyaki sauce or kung pao sauce. there are tons of other sauces out there that you can use also! i also use salmon for this - i just bake the salmon w/ salt & pepper in the oven for 20 - 25 min first, after it's cooked, i removed the skin & add it to the rice in the pan... lining the baking pan w/ foil before cooking the salmon makes the clean up of that really easy as well!

    Hamburger Helper (made with ground turkey and follow any add in suggestions on the box-- like fresh mushrooms or kidney beans, YUM!)
    Turkey Chili
    Veggie Chili (a lot of chopping, but very yummy)
    Homemade Pizza
    Anything in the crockpot!
    Turkey patty cheeseburgers
    Stir Fry

    Just made these the other day and to my surprise all my kids and my husband ate them. 1 cup of old fashion oat meal, 5 egg whites, and 3 table spoons of fat free cottage cheese. A pinch of brown sugar and sprinkle some cinnamon. Blend it all up in a blender or a magic bullet, until you have a pancake batter. Then fry them up in a pan with some Pam. You can drizzle some sugar free syrup or honey on them and/or spray butter. Good Luck!

    ***Lentil soup with Kelbasa Sausage***
    sautee olive oil, garlic, 1 shredded carrot, 1 chopped onion
    Add 6 cups of water
    Add 1 large canned tomatoes--preferabley low sodium or you can use fresh tomatoes
    Add 2 cups of chicken stock-preferabbly low sodium
    Add 1 cup of dry lentils (wash first)
    Add seasonings; pinch of marjorim, oregano, pepper
    Cut up 1 Kelbasa Sausage or Turkey Sausage

    Put everything together and let it sit on the stove for a couple hours to cook. It's super delicious and I was surprised that my 3 year old and 6 year old both love it. Perfect for cold days or low cal comfort food. I like to serve it with warm cornbread.

    I made it last night, and it was so easy and so good! My dad even liked it, and he is definitely not into healthy stuff!

    Ground turkey burgers!! I'm a college student and my roommate and I made these, they took like 10 minutes. Mix ground turkey with cut up raw spinach, a tiny bit of low-fat mayo (just a teaspoon), oregano, italian seasoning, grey pupon, canned tomatoes= mix it all together and cook like you would hamburgers.

    Lemon Garlic Chicken Breast

    Take chicken breasts and put in glass dish. Cover with lemon juice, fresh garlic and a bit of olive oil.

    Cook in oven at 400 for 30-35 minutes.

    You can do the same recipe for curry chicken - greek yogurt mixed with curry powder on top of chicken breasts.
    Basil chicken - fat free ricotta and basil mixed together over chicken, topped with a bit of mozz cheese

  • I like a Morning Star Chick Patty on a Orowheat Sandwich Flat bun with laugh cow cheese, thinly sliced red onion and stone ground mustard. It's SO good. I usually warm up some frozen veggies to go with it and have a tall glass of crystal lite limeaid.
