250 calorie lunch and I'm STUFFED!

I just made a delicious stir fry with zero calorie Miracle Rice, some chopped fresh veggies, shrimp, hoisin sauce and a splash of chicken broth. It was so yummy, and was a nice switch up from my usual sandwich for lunch. I wish I had thought to take a picture, it was a thing of beauty!!

Sounds good!! I've started using fat free low sodium chicken broth instead of butter/oil in recipes and it's awesome. Really cuts down on calories but not flavor.0

i had to look up this miracle rice. miracle is the brand. it's rice made out of glucomannan (soluble fiber). interesting except WAY too expensive for me.0 -

I agree, the Miracle brand is expensive. I bought some on a groupon for half price, and it was still pricey. Since then, I have found out that you can purchase similar product at Asian food markets. If you try them, I highly recommend using them in Asian inspired dishes. The Miracle Noodles came with recipes to substitute them for pasta in Italian dishes but I didn't have good results with that.0 -

i wish i had an asian market near me but the closest one is an hour's drive away. it's taken me a year to get my 1st generation italian husband to eat wheat pasta - i'll never get him to try the miracle noodles. LOL!0
